Audience & Theme

Audience: Black tie event for health professionals 21+ years old who
want to support further research and funding for the National Eating
Disorder Association (NEDA). Proceeds from this event will go
towards NEDA and their efforts to help those affected by eating
disorders.

Theme: The event will be casino themed and will include casino-
inspired food and entertainment such as a silent auction and poker
tables.

Production Schedule
Night Before Event

8:00pm- Bussers set up tables while dishwashers clean tableware for place settings

8:30 pm- Servers prepare tableware for place settings and set out tablecloths.

9:00 pm- NEDA volunteers set up the stage and the silent auction tables.

Day of Event

11:00 am- NEDA volunteers start decorating the tables with centerpieces and name plates.

3:00 pm- Bartenders set up the bar

4:00pm- NEDA volunteers perform a sound check before guests arrive

5:00pm-6:00pm - Guests begin arriving and the bar, silent auction, and poker table open

6:00 pm- NEDA volunteers deliver a speech and dinner service follows

8:00 pm- Silent auction winners are announced

9:00 pm- Event ends and clean up begins


Food Production Schedule
Night Before Event

8:00pm- Sous chef and prep cooks chop romaine lettuce for the Caesar Palace Salad. The
lettuce will be labeled and placed in the refrigerator when done.

8:30pm- Sous chef and prep cooks cook and peel the shrimp for the High Stakes Shrimp
Cocktail. The shrimp will be labeled and placed in the refrigerator when done.

Day of Event

8:00am- Begin preparation of the brisket for the Black Jack Brisket Sandwich

9:00am- Sous chef and prep cooks peel and chop potatoes for the main course.

10:00am- Sous chef and prep cooks prepare the Triple Stud Cherry Cheesecake. The
cheesecake will be labeled and placed in the refrigerator when done.

11:00 am- Prep cooks prepare the coleslaw. Coleslaw is then labeled and placed in the
Food Production Schedule Ctd.
4:30pm- Mashed potatoes are cooked

5:30pm- High Stakes Shrimp Cocktail appetizer is plated

6:00pm- High Stakes Shrimp Cocktail appetizer is served

6:00pm- Caesar Palace Salad is tossed and plated

6:00pm- Black Jack Brisket scheduled to finish cooking and temperature checks are performed

6:20pm- Caesar Palace Salad is served

6:30pm- Black Jack Brisket Sandwich, coleslaw, and mashed potatoes are plated

7:00pm- Main course is served

7:30pm- Triple Stud Cherry Cheesecake is plated

7:45pm- Triple Stud Cherry Cheesecake is served

*Throughout the night, the Double Down drink will be made to order by the bartenders

Set Up Duties
Executive Chef Oversee preparation of each menu item and provide assistance as needed.

Sous Chef Chop romaine lettuce, peeling shrimp, peeling and chopping potatoes, preparing cheesecake, preparing
coleslaw, and cooking mashed potatoes.

Prep Cooks Chop romaine lettuce, peeling shrimp, peeling and chopping potatoes, preparing cheesecake, preparing
coleslaw, and cooking mashed potatoes.

NEDA volunteers Set up the stage and silent auction tables. Perform sound check. Decorate tables with centerpieces and
name plates.

Bartenders Prepare bar for service

Dishwashers Ensure all tableware is clean for place settings before servers set up tables.

Service Duties

NEDA Volunteers Assistance with the poker table, emceeing, silent auction, and check-in table.

Bartenders Provide customers with made to order drinks.

Dishwashers Effectively clean all dishes as bussers bring them .

Bussers Ensure that all tables are continuously being cleared of dirty plates.

Servers Deliver plated meals to guests in a professional and timely manner.


Tear Down duties
Executive Chef Properly store extra food if necessary

Sous Chef Leads the cleaning food preparation areas and equipment. Assist with dishes as needed.

Prep Cooks Cleaning food preparation areas and equipment. Assist with dishes as needed.

NEDA volunteers Tear down the stage, silent auction tables, and check-in table. Remove all decorations and centerpieces
from tables.

Bartenders Clean up bar area

Dishwashers Finish washing dishes. After all dishes are washed, place dishware in appropriate storage

Bussers Take down the tables and taking out trash

Servers Clear any remaining dishes and linens on tables.
