Story of Prem Ganapathy He came to Mumbai like millions of others, in search of a better future. Inspired by McDonald’s, Prem Ganapathy has risen from humble dishwasher to owner of the fast food chain ‘Dosa Plaza’, with 26 outlets across India. Prem Ganapathy (PG) did not have to go to a B-school to learn all this. He found knowledge, outside of college, on the hot and dusty streets of Mumbai. Starting his career in the ‘restorent line’ as a dishwasher. From tea stall to roadside dosawallah, to running a small food joint near Vashi railway station – that would have been achievement enough for most people. Cont….. Prem Ganapathy opened a counter at New Bombay’s first mall Center One. Today there are 26 ‘Dosa Plaza’ outlets all over India and a franchise even in New Zealand. The year was 1992. Prem with a capital of some twenty thousand, Prem Ganapathy set up a roadside stall of his own. Prem Ganapathy’s dosa stall flourished from 1992 to 1997, outside the Bombay Mercantile Co-operative Bank. And the money was good too. Prem Ganapathy was making Rs 20,000 per month – as profit. Ganapathy was meticulous and sincere in his work. Cont….. Prem Ganapathy was living in a rented house in Vashi’s Sector 11. The house served as the ‘kitchen’ from where all the chutneys, potato bhaji and dosa batter was prepared. The stall needed round the clock attention two more brothers joined in to manage the operations. He put a lot of emphasis on hygiene. Unlike other roadside dosawallahs we always wore shirt and pant, not lungi. We wore hairbands, and we kept the cart clean. Plenty of car owners stopped by. Including the ‘bade log’ in Mercedes. And yet, the food was economically priced. Two idlis at Rs 4, masala dosa for Rs 10. Far cheaper than the popular Navratna restaurant in the vicinity. By 1997, Prem managed to save a couple of lakhs. With that capital, he put one of his younger brothers into a kirana shop business in Chennai. Cont….. Ganapathy's day used to begin at 5.30 a.m. everyday. He cooked the food all by himself, used to be on the road till about 3.30 pm. He took a break of two hours every evening and spent the time surfing at a cyber cafe. I used to read about various businesses and learned quite a lot in 1998, Ganapathy decided to take a kiosk outside the Vashi railway station in Navi Mumbai to open the first outlet called Prem Sagar Dosa Plaza. tried my luck by investing in a Chinese restaurant, but it flopped. His experiments with dosas resulted in exotic varieties like American Chopsuey, Schezwan Dosa, Paneer chilly, Spring roll dosa to name a few. Within a year, Dosa Plaza had created 25 original varieties of dosas. Cont….. He did a lot of experiments to improve the taste and variety. By 2002, Dosa Plaza had 104 delicious varieties of dosas. Today, he has 35 outlets including franchiees. We plan to make it 100 outlets by 2011. In 2008, we opened franchisee outlets in New Zealand. About 50 per cent of our clients in New Zealand are locals. In fact, the former Prime Minister of New Zealand, Helen Clark and other ministers had dinner from our outlet. The next outlets will be in the US and Dubai. Today, Dosa Plaza has 35 outlets across 10 states in India with a turnover of over Rs 5 crore (Rs 50 million). Advice to Young Entrepreneurs Kapda ka bussiness karo,food ka bussiness karo, Jo bhi karo sabse hat ke hona chahiye aur branding karna chahiye. Barabar costing karke,sahi tareeke se handle karoge to kaafi profit hai..kisi bhi business mein. Food business mein dekhna padta hai ki item kya hai. Main kah khol raha hoon? Jaise ki bus stand ke saamne hai to wahan kya bikega. Phir thoda specialise hona chahiye. Clean and hygiene par dhyaan dena chahiye.Branding and visibility.
