APPLIANCES AND
SMALL KITCHEN
WARES
INTRODUCTION

THIS CHAPTER DEALS WITH APPLIANCES AND


SMALL KITCHEN WARES, A GROUP OF SMALL
EQUIPMENT THAT ARE JUST IMPORTANT AS THE
LARGER EQUIPMENT. EACH HAS ITS OWN
UNIQUE ATTRIBUTES THAT WILL CONTRIBUTE
TO THE COMPLETION OF CERTAIN TYPES OF
WORK IN THE FOODSERVICE OPERATION.
THE SMALL KITCHEN WARES ARE DEFINED IN
WHAT SECTION OR DEPARTMENT THEY MIGHT
BE NEEDED. THERE ARE ALSO ADDITIONAL
INFORMATION ABOUT THE USAGE OF THE
KITCHEN WARES.
KITCHEN APPLIANCES
AN APPLIANCES IS AN INSTRUMENT
OR TOOL THAT PERFORMS SPECIALIZED
PREPARATION TASKS, AND IS NORMALLY
OPERATED BY ELECTRICITY OR GAS.
1. BLENDER

FUNCTION: chops solid food into smaller pieces


extracts liquid from juicy food
blends liquid and solid together in a vortex
the vertical action of the vortex incorporates air into the mixtures making it frothy and foamy
2. FOOD PROCESSORS

FUNCTION: slices, shreds chops solid food


blends or emulsifies liquids
mixes and kneads dough
purees soft food
3. JUICERS AND JUICE EXTRACTORS

FUNCTION: SEPARATE JUICE FROM THE PULP


4. RICE COOKER

FUNCTION: cooks rice and other food in a metal container within a closed environment using moist heat from
boiling liquids.
Controlled by a device that senses when the rice is done cooking and switches automatically to a
lower temperature to keep the rice warm.
5. TOASTER

FUNCTION: toasts sliced bread, English muffins, bagels

FUNCTION: heats rolls and leftover


make grilled sandwiches
heats up food from above and below
readily browns food
7. MICROWAVE OVEN

FUNCTION: cooks, thaws, defrosts, and heats food


very useful in snack bars waiter’s stations, grills

ESPRESSO CAPPUCCINO MACHINE

FUNCTION: CREATES THE WATER PRESSURE, TEMPERATURE AND STEAM NECESSARY TO PRESS
OUT THE FLAVOR FROM COFFEE GROUNDS.
9. DRIP COFFEE MAKER

FUNCTION: To brew a pot of coffee, pour a measured amount of cold tap water into the reservoir and
switch it on.
Line the basket with filter paper and pour the coffee grounds.
A glass carafe or air pot holds and serves coffee

SMALL KITCHEN WARES REFER TO


THOSE ITEMS THAT ARE USUALLY HAND-
HELD AND ARE USED IN PREPARING,
COOKING, BAKING, AND SERVING FOOD.
A. Frequency and ease of use
Among all kitchen equipment, the small wares are the most
frequently used by numerous hands. These wares are often
mishandled because, individually considered, these are
relatively inexpensive compared to the large equipment.
However, if they are not available in the kitchen, efficiency
of the workers is adversely affected. Commonly used wares
should be durable and be of the best quality. On the other
hand, items that are seldom utilized may be given the least
priority in the list of regularly purchased small equipment.
B. Safety and Sanitation

The safety aspect of the equipment should be highly considered, most


especially cutting implements. Select wares having easy to clean surfaces and
cleaning design.
