LESSON 6 – OCCUPATIONAL HEALTH AND SAFETY PROCEDURE

UNEXPECTED KITCHEN HAZARDS


( COMMON HAZARDS AND RISKS IN
FOOD ESTABLISHMENT)

RINSING RAW MEAT AND POULTRY
• Rinsing raw meat and poultry is not a must. It can affect the taste and the freshness of the meat and
poultry. For our family to eat a fresh and delicious meal.
GREASING RANGE HOOD AND FILTER
• The smoke from the stove goes up into the hood. The reason why it gets dirty. Always look at it to see if
it is dirty if it is dirty clean it. Because maybe the dirt fall of to the food you are cooking.
RADON GAS
• Radon Gas is a radioactive, colorless, odorless, tasteless noble gas.
• It is considered as a health hazard because of this radioactivity.
• To prevent like this tragedy always test the radon gas. If you don’t how to use it you should buy test kits
before using it.
NO FIRE EXTINGUISHER
• Fire Extinguisher is important in the kitchen. If you are cooking then you leave the kitchen while the
stove is still open. It can cause to fire. If this happened you need a fire extinguisher. Buy a fire
extinguisher to be prepared if these things happen.
DIRTY SPONGES
• Sponges are used to clean utensils. How can we clean our utensils when the sponge is dirty? To avoid
having diseases we should change our sponges every 2 – 3 weeks.
CARBON MONOXIDE
• Carbon Monoxide is a colorless, odorless and tasteless gas.
• The highest concentrations of CO comes from appliances.
• It can cause to headaches, nausea, shortness of breathe, confusion , brain damage and death.
• Don’t burn charcoals inside the house and never heat the house with the gas stove.
MOLD
• It is a fungus that grows in food. When you ate the food with mold you could be poisoned. Always look
on the food check if it doesn’t have mold.
OVERLOADED CIRCUITS
• Overloaded Circuits can cause sparking of electrical wires that can cause fire. To prevent this incident
don’t use too much electrical appliances in one extension. You can use materials same like them but
not using electricity like the mixer you can use the metal whisk.
BAD STORAGE HABITS IN THE REFRIGERATOR
• We should always put a cover in anything we put in the refrigerator. Put in the proper place all we put
it the refrigerator. And always put in the refrigerator the needed things only.
UNATTENDED HIGH HEAT
• Always look at the flowing heat on the gas stove. To prevent causing fire. And also to prevent burning
of utensils that can cause you a lot of purchases.
STOVE AND OVEN HAZARDS
• After using the oven or the stove always turn it off to prevent sparking of plugs. And always use pot
holders to avoid getting burned by the container used in the oven or stove.
GARBAGE DISPOSAL
• Garbage can affect the smell and look of the kitchen. Always throw garbage. Also put it on the proper
place like Biodegradable and Non – Biodegradable.
SMALL APPLIANCES
• The blender is used for making juices and shakes. After using it, you have to clean also the blade.
Sometimes we could have wounds by cleaning the blade because it’s sharp, we should be careful of
cleaning it to avoid getting harmed.
• The mixer is used for mixing/blending foods. We could be harmed when you see something floating
around the food your mixing then you get it while the mixer is on. We should turn off the mixer if you
wanted the dirt or something to get off of your food.
• Crock pots are used for making soups. Children could be harmed by reaching it and fall it to itself. To
avoid this tragedy keep it away from children by putting it far from reach of children.
• Can openers are used for opening sealed can. If you use it wrong there is a possibility to have wounds.
We study first how to use it before attempting to avoid getting harmed.
• Keep electrical cords away from the sink to avoid sparking of electrical socket that can cause fire.
KNIVES
• In using knives we should be careful. Because knives are sharp maybe we didn’t see that we already
have wounds by the knife. To prevent it we should always see what we are doing. Always focus on it for
us preventing to get harmed.
HOUSEHOLD CHEMICALS
• Household chemicals helps making the house clean. But on the other side it can affect on our foods.
Because it contains poisonous chemicals, once we eat the food there is a possibility we can be
poisoned. We should be careful on using these types of chemicals always look at its content to see if it
is good on our health.
