Chinese NY Project ( 蒸鱼)

Background
“ 鱼” (Fish) =(Surplus)
In Chinese, ( 鱼 Yú ) "fish" sounds like ( 余 Yú) ‘surplus'. Fish is a traditional Chinese New Year

dish on the Chinese New Year dinner menu. Chinese people always like to have a surplus at the end

of the year, because they think if they have managed to save something at the end of the year, then

they can make more in the next year.


There are some rules with the position of the fish:

- The head of the fish should be placed toward elders or the important guest representing respect
- Diners can enjoy the fish only after the one who faces the ‘fish head’ eat first
- The fish shouldn’t be moved
- The two people who facing the fish head and tail of the fish should drink together as this is considered to
have a lucky meaning

Lucky sayings for Eating Fish: ( 年年有余 Niánnián yǒu yú) May you always have more than you need!
Recipe

● 两个大葱 liang Gè dàcōng


● 两汤匙生姜 liang tāngchí shēngjiāng
● 一小束香菜 yi xiǎo shù xiāngcài
● 一个半汤匙生抽(或调味酱油) yi ge ban tāngchí shēng chōu (huò
tiáowèi jiàngyóu)
● 八分之一 茶匙盐 ba fen zhi yi cháchí yán
● 八分之一茶匙糖 ba fen zhi yi cháchí táng
● 两汤匙热水 liang tāngchí rè shuǐ
● 十 盎司精致白鱼片 shi àngsī jīngzhì bái yú piàn
● 两汤匙植物油 liang tāngchí zhíwùyóu
Instructions

1. 把葱切成两英寸长,然后切成两半。将约 十五克生姜切成薄片,切丝。把香菜
粗切一下。把芳香剂放在一边。
Bǎ cōng qiè chéng liang yīngcùn cháng, ránhòu qiè chéng liǎng bàn. Jiāng yuē shi wu kè shēngjiāng qiè chéng bópiàn, qiē sī. Bǎ
xiāngcài cū qiè yīxià. Bǎ fāngxiāng jì fàng zài yībiān

2. 将生抽、盐、糖和热水混在一个小碗里,搅拌至糖和盐溶解。放在一边。
Jiāng shēng chōu, yán, táng hé rè shuǐ hùn zài yīgè xiǎo wǎn lǐ, jiǎobàn zhì táng hé yán róngjiě. fàng zài yībiān

3. 准备好您的蒸制装置,并注满 一到两 英寸的水。煮滚。


Zhǔnbèi hǎo nín de zhēng zhì zhuāngzhì, bìng zhù mǎn yi dao liang yīngcùn de shuǐ. Zhǔ gǔn.

4. 冲洗你的鱼并放在盘子上。小心的把它放在蒸锅里,把火调到中等。水应缓慢

Chōngxǐ nǐ de yú bìng fàng zài pánzi shàng. Xiǎoxīn de bǎ tā fàng zài zhēng guō lǐ, bǎ huǒ tiào dào zhōngděng. Shuǐ yīng huǎnmàn
fèiténg, chǎnshēng dàliàng zhēngqì, dàn bùyào tài gāo, yǐmiǎn shuǐ zhēngfāguò kuài.

5. 根据鱼片的大小和厚度,盖上盖子蒸七到十分钟。用黄油刀检查熟度。如果它
很容易从鱼片最厚的部分落到盘子底部,鱼就熟了。

6. 关掉火,小心地排出盘子上的任何液体。在蒸鱼上撒上大约三分之一
的葱、姜和香菜

7. 制作酱汁,将炒锅或小平底锅加热至中高温,加入 两汤匙植物油。加入剩余的 三分
之二姜,炒 一 分钟。加入葱的白色部分,煮 三十秒。然后加入其余的葱和香菜。混合
物应该发出嘶嘶声。
Zhìzuò jiàng zhī, jiāng chǎo guō huò xiǎo píngdǐ guō jiārè zhì zhōng gāowēn, jiārù liang tāngchí zhíwùyóu. Jiārù shèngyú de san fen zhi er jiāng,
chǎo yi fēnzhōng. Jiārù cōng de báisè bùfèn, zhǔ san shi miǎo. Ránhòu jiārù qíyú de cōng héxiāngcài. Hùnhéwù yīnggāi fāchū sī sī shēng.

8. 加入酱油混合物。把混合物打成气泡,煮到大葱和香菜刚刚枯萎,大约 三十 秒。
Jiārù jiàngyóu hùnhéwù. Bǎ hùnhéwù dǎ chéng qìpào, zhǔ dào dàcōng héxiāngcài gānggāng kūwěi, dàyuē san shi miǎo.

9. 把酱汁倒在鱼上。立即上菜!
Bǎ jiàng zhī dào zài yú shàng. Lìjí shàng cài!
How to eat

鱼应该是剩下的最后一道菜,因为这有年年有余的吉祥谐音。 Yú yīnggāi shì


shèng xià de zuìhòu yīdào cài, yīnwèi zhè yǒu nián nián yǒuyú de jíxiáng xiéyīn.

头应朝向尊贵的客人或长辈,表示尊重。 Tóu yīng cháoxiàng zūnguì de kèrén


huò zhǎngbèi, biǎoshì zūnzhòng

面朝鱼头的人先吃后才能享用鱼 Miàn cháo yú tóu de rén xiān chī hòu cáinéng


xiǎngyòng yú

鱼不应该被移动。面对鱼头和鱼尾的两个人应该一起喝酒,因为这被认为有吉
祥的意思。 Yú bù yìng gāi bèi yídòng. Miàn duì yú tóu hé yú wěi de liǎng gèrén
yīnggāi yīqǐ hējiǔ, yīnwèi zhè bèi rènwéi yǒu jíxiáng de yìsi.
