INTRODUCTION

Biryani encompasses a heritage of classical South Asian


cuisine. Its complexity and skill to produce marks it as one of
the finer delicacies of our time.

Originally, it was invented during the Mughal Empire. Mughal Emperor


Shah Jahan’s Queen, Mumtaz Mahal is reportedly thought to have
inspired the dish in the 1600’s.Mumtaz Mahal, Shah Jahan’s queen and
the inspiration behind the iconic Taj Mahal. It’s said that she was
shocked to see the state of the Mughal soldiers, who were weak and
undernourished. She ordered her cooks to come up with a special dish of
meat and rice to be served to the soldiers – and so biryani was born.

• Fresh vegetables and herbs such as cauliflower, green beans, peas,


carrots, peppers and coriander
•Fine meat cuts, poultry and fresh seafood. Meat is usually marinated
with a yoghurt-spiced base to give it a tenderness
•Long grain rice for a north Indian style biryani, and short grain rice
for a south Indian version
• Aromatic spices which can vary from region to region, giving the
dish varieties in taste, texture and aroma
