Pandan balls with cocopandan sugar

(klepon)
coconut sugar ingredients:
1 cup coconut flakes (75 gr)
¼ tsp salt
¼ cup & 1 tbsp water (75 ml)

How to make :
-mix all
-microwave at max
-2 minutes with 30 seconds intervals,
stir between intervals
-after 2 minutes set aside
klepon ingredients :
1 cup glutinous rice flour (130 gr)
1 tbsp rice flour

How to make :
-Mix well
-1/2 cup water (125 ml) with pandan essence & green food
coloring (por bit by bit)
-mix until everything comes together into a dough
-take a thumb sized dough
Form into a cup shape, more or less.
-fill with some coconut sugar (it’s the same as gula malaka)
-pinch to seal
-gently roll into a ball
-place on an oiled cling film (to avoid sticking)
How to cook :
-Bring a pot with water to a boil
-carefully place the balls inside &
cook until they start to float
(do in batches to avoid overcrowding
the pot)
-once floating, continue cooking for
another minute
-take them out
-previously prepared coconut
-while still hot, coat them well with
the coconut
-and finally serve on a plate
