Pasta

Pasta
• Pasta is an Italian food made from dough using flour
water and or eggs . The two basic style of pasta are
dried and fresh. There are also variations in the
ingredients used in the pasta. The time for which pasta
can be stored varies from days to years depending upon
whether the pasta is made with egg or not, and whether
it is dried or fresh . Pasta is boiled prior to consumption.
Pasta can divided into categories:
• pasta de semola di grano duro or semonila pasta. Made
from durum wheat flour , water and a little salt .

• Pasta all’uovo or pasta with eggs, whis is made of eggs ,


flour, and salt , commercial pasta all’uovo is generally
made with durum wheat flour , which gives it a firmer
texture.
Types of Pasta
• Capelli d’ angelo – this is very fine noodle , also
known as angel hair
spaghetti

Arguably the most famous of all pasta form, spaghetti are


round strands that are excellent with various sauce.
Fettucine

Also known as trenette, suited to medium heavy to


rich sauces.
Tagliatelle

This is slightly wider than Fettucine and its classic


partner of Bolognese sauce.
Papardelle

These are very wide ribbons, also called Larghissime,


which could either be straight edged or saw-egde
Tagliolini

Perhaps one of the thinnest ribbons, tagliolini is


usually served with suace or broth.
• Penne – the worlds penne means pen, which this pasta resembles
because of its quill-like shade.
• Cavatappi – these cork-screw, which are a larger version of fussilini
lunghi.
• Maccheroni- also known as macaroni, refers to a variety of tubular
pastas.
• Rigatoni- these are larger, grooved tubes which go well with meat
vegetable sauces.
Special form
•Farfalle- these are flat, rectangular
noodles that are pinched in the center.
•Conchiglie- are ridged shells that are
available in a variety of sizes, with the
smallest ones used in soups the middle-
size ones with sauce, and the largest
ones stuffed.
•Orecchiette- so called because they
resemble little ears, orecchiette is
traditionally hand-made from egg less
pasta dough
•Fusilli corti- these are like short
springs that are perfect with chunky
sauces vegetables sauces that wrap
around their shape.
•Ruote de carro- these cartwheels ,
which originated from sicily.
