BAKERY INDUSTRY
• In baking industry, there is an increasing focus
on lipolytic enzymes.
• Lipases can be used to substitute or
supplement traditional emulsifiers since the
enzymes degrade polar wheat lipids to
produce emulsifying lipids.
• The main purpose of lipase was to increase
the flavour of bakery goods by esterifying
short-chain fatty acids and liberating them.
• Additionally, it extended the shelf life of the
majority of bakery goods.
• By using lipase catalyzation, texture and softness
could be enhanced.
