What is appetizers?

Appetizers are foods that stimulate appetites through


their enticing flavour, aroma, or pleasing look.
Small portions or pieces of highly seasoned food are
typically provided before a meal to stimulate and
increase one’s appetite.
Basic Ingredients in preparing appetizers

Fruits- are usually served as cocktail appetizers.


Vegetables- Can be mixed with other ingredients. These can
be served as garnishes .
Bread, Pastry or Crackers – are commonly used as base for
canapés.
Spreads- Such as butter or softened cream cheese are used
in preparing canapés to support their base.
These are the different kind of Appetizer.
Canapes
Cocktails
Soup
Relishes
Petite salad
Fresh fruits and vegetables
And many more.
Characteristics of an appetizer
An appetizer may be served in different ways and forms, from liquid to
solid, as long as it performs its primary function.
An appetizer may be served as a snack or finger food at social
gatherings and receptions such as cocktail party
The appearance of an appetizer must be eye- catching, colourful, neat,
flavorful and well-seasoned. It should complement the dish that may
follow.
It is served on individual plate when guests are seated.
It is serve cold or hot.
Finger food consist of three parts: a base, a spread or toppings and
garnish.

1.Cocktails – may be fruit juice served in well-chilled glasses or
fresh fruits and vegetables sliced and served in small portion
Cocktail food can be alcoholic or non- alcoholic.

2. Petite Salad – is called this way because it comes in very


small portions and usually displays the characteristics
common to a salad. It is daintily and artistically arranged

3. Soup is included in the appeizers category because it is


often served as the first course of the meal.

4. Relishes refer to pieces of raw vegetables (also known as
crudites) and pickled items.

5. Canapés are bite sized, open- faced sandwiches. A canapes


consists of the following parts.
a. Base- may be made from various food
items like crackers, breads pumpernickels, pastries,
and crispbreads.
b. Spread- butter or softened cream cheese
may be used as spread for canapes.
c. Garnish- refers to any food or combination
of items placed on top of the spread.
