Apa itu lipid ?

• Lipid adalah senyawa organik yang diperoleh dari

proses dehidrogenasi rangkaian hidrokarbon.

• Lipid bersifat amfifilik, artinya lipid mampu

membentuk struktur seperti vesikel, liposom, atau
membran lain dalam lingkungan basah.

• Istilah lipid kadang-kadang digunakan sebagai

sinonim dari lemak.
LEMAK

• Lemak adalah ester dari gliserol dengan asam-asam

karboksilat suku tinggi. Ester- ester itu dikenal dengan gliserida.

• Lemak umumnya bersumber dari hewan sedangkan minyak

dari tumbuhan

• Pada temperatur kamar lemak berwujud padat, sedangkan

pada temperatur kamar minyak berwujud cair.
Rumus Umum Lemak
• Lemak dan minyak memiliki struktur dasar yang sama,
yaitu merupakan trimester dari gliserol yang dinamakan
trigliserida. Umumnya R’ ≠ R”≠ R’”
Jenis – jenis Asam Lemak
Jenis-jenis asam lemak :

A. Asam lemak jenuh

asam lemak yang semua ikatan atom karbon pada rantai

karbonnya berupa ikatan tunggal (-C-C-)contoh :

contoh :
- Asam laurat
- Asam palmitat
-Asam stearat
