Why are some wines filtered?


Arguably, many steps of the winemaking process are clarification
steps. For instance, the flow of free-run wine from the solids of
fermentation is a clarification step. The separation of Chardonnay
from the lees, called racking, also results in a clearer wine. Racking,
the transfer of any wine from one oak barrel or stainless steel tank
into another, separates the clearer wine from sediment left behind
just like transferring an old wine with sediment from bottle to
decanter.
However, the elaborate automated process of filtration clarifies
thousands of gallons of wine at a time and there are risks. The
decision to filter depends upon whether a winemaker believes the
process will significantly improve wine clarity, character and longterm integrity. One school of thought believes aggressive filtering
removes beneficial, natural compounds in a wine responsible for its
unique flavor, style, strength and aging potential. So, while not
filtering wine opens the possibility that an off-taste might develop in
the bottle, filtering too much out of the wine could leave it flat and
uninteresting. Most often, even expensive luxury brand wines pass

once through a coarse filter, removing only the largest particles,


leaving the smallest ones to allow the wine to keep its personality.
While a wine doesnt normally state that it was filtered, those not
filtered often proudly announce Unfiltered right on the front label.
Although it is not an indication of quality in either case, you may
want to make a mental note of any red wines you especially enjoy
and see if they are unfiltered. Its a winemaking step to be aware of,
though not one that should influence your purchasing decision.

Also know:
Fining: Stabilizes wine by addressing microscopic particles that
filtering cannot address, but, if left in the wine might create
aroma or flavor faults over time.
Cold Stabilization: Chills wine to precipitate two chemical
compounds tartrate and bitartrate. These compounds later
might settle at the bottom of the bottle or cling to the cork.
Without cold stabilization, bottled wine exposed to extreme
cold storage conditions could precipitate the tartrates.

27th Annual Afternoon of Epicurean Delights


On Sunday, June 1, An Afternoon of Epicurean Delights (AED),
will be held, as always, from 11:30 a.m. to 3:30 p.m. at the tranquil,
beautiful gardens and grounds of the historic Chapman House by the
Sea in Shell Beach.
Afternoon of Epicurean Delights will celebrate 27 years of this
spectacular event which benefits the Health & Prevention Division of
Community Action Partnership of San Luis Obispo County
(CAPSLO). All proceeds directly provide over 10,000 medical, and
educational and advocacy services for under-served families, women,
men, and youth throughout our county.
You are invited to stroll through this amazing estate on the bluffs
of the Pacific Ocean with stunning gardens and panoramic ocean
views, sit poolside, listen to great music in two locations, participate
in a silent auction with items featuring local art and photography,
hand-crafted jewelry, premium and reserve wines, get-away
weekends, gift baskets, and much, much more, all while tasting the
best food their longtime vendors, vintner, and confectioners have to
offer.

Why the Weather Matters This Year AND Next


Theres one thing you can count on as a farmer: one years
weather will never be like any other. What that means in practice
is that the past only serves as example, not roadmap. And
especially in a year like this one, where none of the established
past patterns seem to hold and drought is on the close horizon,
how we strategize about the weather and our water use makes the
difference between having grapes to make into wine and having to
take a pass after two bumper harvests in a row. What makes this
doubly fraught is that this years decisions affect two years crops.
Why? Because vines arent like other annual, row crops. If you
look closely at a vine, you will see both this years and next years
buds, which is why weather damage can be such a problem: a
grower is forced to contemplate the loss of multiple years income.
Inside each bud are really small leaves, and from them come the
leaves, canes, shoots and grapes, and each bud has concentric
layers, which is why weather damage is along a continuum.
Minor damage, generally from frost, may reduce the yield a bit,
but its the more severe darkening, akin to frostbite, which is the
real issue, guaranteeing a crop loss of at least fifty percent, if not
more. Equally, the phloem, the bark on the exterior of canes and

vine trunks, can also be damaged by cold, causing crop losses,


too.
The best way to understand winegrowing options for weather
mitigation is to walk through the vineyard throughout the year.
Winter cold, even as cold as we got this past year, is actually no
issue because the vines are dormant, which is why all fifty states
have vineyards. Spring is when weather has the most impact on
two years crops because the weather often flipflops quite quickly,
and rain at an early point can be helpful to bring temperatures up
while later in the season causing crop damage via hail or
thunderstorms winds. Shattering of the bloming flowers can
disrupt clusters or keep them from being fertilized, yet when faced
with a frost event earlier in the year, rain is welcomed as it brings
the temperature up above freezing. summer and fall heat can also
be an issue because too-high a temperature can cause vines to shut
down, shriveling or even sunburning grapes, and also potentially
killing the vine in the process.
There are actually lots of options for mitigation, and the best, as
you might expect, are set up so as to help solve more than one
problem. Believe it or not, something as simple as low trellising
versus high has an impact as far as weather goes as low trellises in
the wrong locales are more subject to frost damage, and higher
trellises can provide shade for adjacent rows. How the trellis is
trimmed in winter and early spring prior to budbreak is thus one
strategy, and there is projected to be a move back to California
Sprawl from the VSP candelabra currently seen all over as the
North Coast replants in the next few years for this reason: not only
does this provide different vine growth and brix gains, but it also
helps as regards frost or hail damage during April and May, when
the buds break and the vines flower.
Mechanical options abound, too. The wine machines, those
twirling engines and fans on poles; the Inverted Sinks or Air
Dams, which essentially turn the wind machine to provide a frost
sink to pull cold air down and away from vines on hillsides and
slopes; vertical sprinklers and micro-sprinklers, which can raise
the temperature or allow frozen water to encase and protect the
vines; and smudge pots, the gas fired heaters for the end of
vineyard rows which work in combination with wind machines
all are ways to work in combination with the land to mitigate
the negatives of weather while allowing the terroir, the locational
distinctiveness, to still show through in the grapes and finished
wines by moving the weather since the vines really cannot. Its
not always easy or cheap, but the results are worth it, no? Enjoy!

Turiya Wines Release of 2009 Vintage Wines


Turiya Wines has officially released the
2009 vintage. This second vintage of wines
produced by Turiya is an addition to the
existing varietals that were previously
showcased (cabernet sauvignon and syrah as
well as a blend of the two dubbed Perptual
Bliss). In this release Turiya's 2009 red blend
called Hither features an enchanting blend of
Petite Verdot and Malbec. Turiya also provides
bottling of the Petite Verdot and Malbec
individually so the consumer has the
opportunity to enjoy the flavor compounds of
each varietal on the purest level.
According to Angela Soleno, Owner and
Winemaker, "Because I age the wines for three
years in barrel and a year in bottle before
releasing, the release of the 2009 vintage of
Turiya Wines has been long awaited and is
highly anticipated." She further explained her
excitement regarding petite verdot, "I really
enjoy working with the Bordeaux grapes and both the malice and
petite verdot grapes have been up-and-coming varietals in California
over the last few years, the consumer awareness is on the rise and
magazines and blogs have published some great articles about it so I

am really excited to get it out there."


Only 183 cases in total was produced for
the 2009 vintage.
Prices on the wines range from $65 to $85 per
bottle. Wines are only available through the
winery.

Not deterred by losing his vision, half of his total
accomplishments were completed after he lost his sight, David is
humble, gracious, confident, focused and openly expresses his inner
vision that can see a God-made world, not a manmade world. It
seems negativity is not in his DNA. Indeed, Hunt Cellars in Paso
Robles has made a habit of grabbing top honors at wine contests and
earning 90-plus scores from wine publications, such as Wine
Enthusiast and Food and Beverage World. Hunt, the owner and
winemaker, proudly pointed out that virtually every wine sold at
Hunt Cellars from Cabernet Sauvignon, Sangiovese or Merlot has
won multiple gold, best of class, or scored 90 points or better.
Putting his peers on an equally footing, Hunt has blindfolded friends
to taste test after taste test, with Hunt wines always coming out first,

David's goal is to produce memorable wines. And he does,
between 6-13,000 cases annually depending upon vintage and
mother nature. He ages his wines in barrel longer than most wineries
in Paso Robles, or for that matter in California.

Gary Eberle is synonymous with Paso Robles. A pioneer with wine roots in
the area since 1973, Eberle has helped shape the regions success for over 40
years. His footprint is wide and deep in the rough and untamed terrain of Pasos
wine history. He was instrumental in founding the Paso Robles AVA in 1983
and he is credited with being one of the first to plant Syrah and produce a 100
percent Syrah wine in the United States. Gary has worked with winemakers
Tom Meyers, Niels Udsen and Tobin James - all local legends whove gone on to
successful careers in Pasos wine industry.
Eberle started his namesake winery with a small group of friends and
investors; his first release was the 1979 Cabernet Sauvignon. Its no wonder that
Cabernet is still Garys go-to wine. Its still what we do best here in Paso, says
Eberle, we can make a soft, yet powerful Cabernet the way it should be.
In addition to its bustling tasting room and award winning wines, Eberle is
home to 16,000 sq. feet of underground wine caves, which can be enjoyed as a
complimentary tour or, for a truly unique experience, by reserving a VIP
tasting. The winery and tasting room offers guests a place to slow down and
capture the essence of Paso great wine, amazing views and fun personalities.
Winemaker Ben Mayo works in the cellar crafting the wines. After starting in
2001 as a cellar rat, he worked his way up to assistant winemaker and was
named winemaker in 2003. The hard work of Eberle and Mayo continues to
pay off; Eberle Winery was named Winery of the Year last summer at the
California Mid-State Fair.
Eberle features a diverse portfolio, with 12 wines on the menu to choose
from on a daily basis in the tasting room. Well always make the Zinfandel,
Syrah and Barbera, which people love, but Cabernet is what we keep coming
back to. Its what we started with and will continue as our core wine program,
says Eberle.

Villa San-Juliette Goes Six for Six as Their Zinfandel Takes the Gold
Villa San-Juliette made a statement at The Dallas Morning
News and TexSom Wine Competition submitting six wines and
receiving six new medals; one gold, three silver and two bronze.
The event, which features 2,729 wines from 27 states and 20
foreign countries and considered one of the most respected wine
evaluations in the country, celebrated its 30th year as a leading
wine competition in the industry. This year, the event was
adjudicated by 14 judges panels that consisted of wine critics,

Master Sommeliers and seven Masters of Wine.

Willenborg utilizes subtle winemaking tactics, drawing from

Il Cortile Ristorante has earned its place as a star within Paso


Robles impressive dining scene, wowing guests for the past five
years. The romantic atmosphere, thoughtful wine list, and exquisite
presentation and service, encourages special occasion dining.
However, with such a creative and diverse menu, it is necessary to
dine at the ristorante year-round! Much like the wine list, the menus
ingredients are a balanced blend of gourmet Italian items as well as
local proteins and produce. Favorite dishes, such as the mozzarella
tasting - mozzarella three ways, and pappardelle with wild boar,
tend to remain on the menu; however, Chef Santos is known for
updating his offerings based on the season. For spring of 2014, the
menu features several new additions, including Carpaccio di anatra
duck carpaccio with gorgonzola sauce, balsamic reduction and
caramelized onions for an antipasti. Under the famed mozzarella
course, Coppa con buffalo is a new option, which features coppa
with buffalo mozzarella and tomato confit. In addition to the milk
for the mozzarella, the buffalo pops up in the primi course as meat,
Fettuccine con buffalo, herb fettuccine with buffalo ragu and
roasted pear. As if that wasnt drool worthy enough, because it is Il
Cortile, the fettuccine is house-made and ultra delectable. If at all

possible, save room for dessert. Whatever the selection, each bite is
like an encore at a favorite concert, extending the incredible dining
experience to the point of over indulgence, just the right amount of
it. Il Cortile is located just one block up from the park on 12th

Never content to rest on their laurels, the team at Laetitia Vineyard &
Winery and NADIA Wines is busy both commemorating the past and
dreaming up big plans for the future.
The 2013 harvest marked 30 years for this picturesque estate producer in
the Arroyo Grande AVA, nearly all of which Winemakers Eric Hickey and his
dad, Dave Hickey, have been around to experience. To honor the occasion,
Laetitia will host a special 30th Anniversary Dinner at the elegant Laetitia
Estate House on Friday, May 9 at 6:30 p.m. Owners Selim and Nadia Zilkha
will be in attendance, as well as Winemakers Eric Hickey and Dave Hickey,
who will pour specially-chosen Laetitia and NADIA wines to accompany Chef
Jose Dahans multi-course menu. Tickets are $145 per person, or $125 for
wine club members. Limited edition magnums of Laetitias 2012 Reserve Pinot
etched with the 30th Anniversary logo and signed by Eric Hickey are also
available for purchase.
As Laetitia looks forward to the next 30 years, sustainability becomes a
major focus. Whether its goats mowing cover crops or the installment of an
employee garden, the Laetitia team is progressive in its approach to efficiency
and responsibility. Next steps include harvesting biomass to convert to
biodiesel. We have been working with a plant called Camelina and planting it
as a winter cover crop, says VP Vineyard Operations, Lino Bozzano. If this
grows successfully, we think we can harvest and convert it into enough
biodiesel on site to supply our yearly diesel demand.
But Laetitias concept of sustainability goes far beyond environmental
responsibility to caring for the community. In fact, the brand recently
announced plans to bottle a new charitably-focused wine called NADIA
Quattro, of which a portion of the proceeds will benefit two local causes each
vintage. For the first year, sales of this blend of Cabernet Sauvignon,
Tempranillo, Grenache and Petite Sirah will benefit the Woods Humane
Society and the Family Care Network, which serves families and children
across the Central Coast.
As a sustainable vineyard and winery, we are always looking for ways to
contribute to the sustainability of our community, says President and
Winemaker, Eric Hickey. Weve made many donations and contributions in
the past but are very excited to give proactively through this new bottling.
With the selected charities rotating with each vintage, we are eager to touch a
wide range of local non-profits.
To kick-off the release of the newest wine, Laetitia will hold a launch party
on June 15th at the winery with live music, delectable cuisine for purchase
from The Pairing Knife food truck, samples of Quattro paired with locallymade chocolates and booths for both Family Care Network and Woods
Humane Society, including animal adoption.

Laetitia Vineyard & Winery Releases Quartet of Wines for Spring


Just in time for spring, Laetitia Vineyard & Winery has
released a quartet of wines from the 2012 vintage one
Chardonnay and three delectable Pinot Noirs to pair with
garden-fresh cuisine.
Winemaker, Eric Hickey, oversees the team that composes
distinctive wines from fruit sustainably grown on Laetitias
Arroyo Grande Valley AVA estate. Two-thousand twelve was an
incredible vintage at Laetitia, he recalls. A temperate and
consistent growing season ended without any heat waves,
allowing for an unhurried, gradual harvest. The result is a
clutch of balanced, expressive wines on par with Laetitias
finest vintages.

Laetitia 2012 Estate Chardonnay (Price: $18.00)


The grapes for this wine were whole-cluster pressed
and went through 75% secondary malolactic
fermentation until naturally arrested at blending. Each
barrel was tasted individually when blended to create an
exquisitely balanced Chardonnay thats varietally true,
while still offering plenty of Laetitias signature spice.
Cooperage included aging in 25% new Franois Frres
and Rousseau barrels for nine months.
Tasting notes: Dried honeycomb and tart green apple
express Laetitias cool climate, along with multilayered
notes of hard lemon candy, wet river rock and hazelnut and a spicy
anise finish.
Pairings: A classic prosciutto-wrapped melon antipasto would pair
nicely with this Chardonnay, as would Baja-style fish tacos topped
with salsa verde.

Tasting notes: This wine is marked by a rich plum hue and
intense candied cherry, leather, white pepper and Cuban cigar
box aromas. The thick bouquet lingers with complex layers of
black fruits, rich mocha and baking spice on the finish.
Pairings: Lentil and mushroom shepherds pie pairs well with
this earthy wine, as does spring lamb.

Laetitia 2012 Whole Cluster Pinot Noir (Price: $40.00)


Unlike other Laetitia wines, this Pinot Noir is made using
45% whole clusters (i.e. including the stems) during
maceration and fermentation, lifting the palate and
changing its entire profile. Aging included 11 months in
50% new Franois Frres and Rousseau French oak
barrels.
Tasting notes: This wine is marked by a refreshing grip
in mouth feel and a singular focus on the palate. Crisp
notes of cassis, whole-leaf tobacco and black
peppercorn overwhelm the bouquet, along with
touches of sweet oak and sultry black tea.
Pairings: Roasted duck with maple-vanilla-glazed
carrots or venison sausage would pair beautifully with
this complex wine.

Laetitia 2012 Estate Pinot Noir (Price: $25.00)


All lots of Pinot Noir grapes used in this wine were de-stemmed to
allow the fruit characteristics to shine through, unmasked. After a
three-day cold soak, a quick fermentation lasted only four days
before the wine was sent to the barrel for 11 months. Cooperage
included a combination of Franois Frres and Rousseau French oak
barrels, 30% new.
Tasting notes: The 2012 Estate Pinot Noir offers a seductive nose of
summer-warm plums and blackberries, with layers of earth, violets
and Asian spice. The palate reveals supple tannins and lively acids
accented with pretty notes of framboise, dark chocolate and rye.
Pairings: Delicious paired with caramelized onion and goat cheesetopped crostini or messy pulled pork sandwiches.

Laetitia 2012 Reserve Pinot Noir (Price: $40.00)


The Reserve du Domaine Pinot Noir is always comprised of fruit that
is given a little longer time on the vine, as well as a little longer time
in oak (11 months in 40% new Franois Frres and Rousseau
barrels) . This head of class Pinot is noticeably rich in dark fruit,
complexity and spice as a result of being blended from 60% of
consistent vineyard blocks and 40% special lots that stood out that

At Calcareous, place is celebrated above all other factors that perfect blend of soil,
water, sun and air. In 2000 Calcareous Vineyards was founded on 342 acres, 1,800 feet
above sea level atop one of the highest limestone plateaus on Paso Robles west side. The
winery earned its name from the solid calcareous rock upon which the vineyard sits,
providing a place for their vines to flourish and produce high-quality, terroir-driven wines.
Winemaker Jason Joyce brings an intimate understanding of these unique qualities that
make Calcareous a special place.
Originally a pharmaceutical chemist, Joyce knew he wanted to become a winemaker
after working his first harvest during a three-month break from lab work. He quickly fell
in love with the all-encompassing nature of wine production: from walking the vineyards
to driving tractors and forklifts to the hard physical work. But most of all, Joyce loved the
way that winemaking forced him to slow down and engage with his senses in a meaningful
way.
Most occupations dont need you to think about smells, taste and sight so deeply, said
Joyce. Your sense of touch when feeling grape skins and seeds, or how the leaves and
vines are feeling. Winemaking is a deeply human activity, and to have that opportunity as
the method of providing for yourself and family is really something rare and special.
In addition to Calcareous Vineyard, Carver and Kates Vineyards are also included in the
Calcareous Estate. From these three vineyards, Joyce creates estate wines such as

Chardonnay, Grenache, Zinfandel, Syrah and Cabernet Sauvignon, as


well as blends such as Lloyd and Moose. The Twisted Wines are
produced from grapes sourced from vineyards to produce from of the
best value wines available including the Twisted Sisters Pinot Noir,
Zinfandel, Matriarch and Main Squeeze.
My winemaking style is fairly simple: dont ruin it, said Joyce.
This area produces such incredible wine filled with rich character. I
was never a strong enough writer to master the poetic prose required
to describe the ethereal; it must be tasted. But that is why you come
to Paso, to get that opportunity to taste and experience yourself. I
guarantee you will find something here that matches your palate.

The 5th Annual Chardonnay Symposium, hosted by Dolphin
Bay Resort & Spa in Pismo Beach, from May 16-18, brings together

Robert Hall Winery has always had a focus on hospitality. Owner, Robert L. Hall, knows
that the smallest of details can make a huge difference when it comes to entertaining. I
wanted to create a warm and beautiful place in Paso Robles that people would visit time and
time again. I had envisioned a facility that would be suited for formal weddings, casual BBQs
and every day celebrations.
With Roberts vision and a dedicated team of professionals, the Robert Hall Hospitality
Center is indeed a place where everything from a casual get together to a formal wedding
becomes an unforgettable memory. The winery offers a large tasting room, complete with an
indoor lounge area, and several outside picnic facilities with expansive vineyard views. The
elegant Meritage Room, formal Wine Library, spacious Amphitheater and aromatic Wine
Cavern are all options for more formal events. From BBQs, corporate events, birthday parties
and weddings, the winery has several perfect venues where food, wine and friends may be
enjoyed.
The tasting room is open daily from 10:00 a.m. to 6:00 p.m. Not only is the tasting staff
friendly, they are also extremely knowledgeable. In addition to answering questions about the
wines, each and every staff member is trained about the winemaking process and are happy to
take guests on a tour of the wine cavern and production facility. The tour is complimentary
with tasting and lasts approximately 30 minutes. Requests for tours are always welcome;
however, the tasting room does ask that group reservations be made in advance.
With the warmer weather, the two regulation Bocce Ball courts are also very popular.

Visitors are encouraged to bring a picnic lunch and take advantage of


the complimentary courts. For those who do not like to pack a lunch,
most weekends the wood-fired pizza oven is going and pizza pies are
made to order in just a few minutes.
The third weekend in May is the time for an area wide celebration
of wine. On Saturday, May 17th from 12:30 to 4:30 p.m., Robert Hall
Winery invites you to take a break and enjoy a tasty burger from the
Burger Bar. All of the toppings you love will be available with your
burger for $10 per person. You can enjoy your burger on the Garden
Terrace, overlooking the vineyard, with a glass of wine and listen to
the Sandii Castleberry Duo -- they play everything from jazz, blues,
soft rock, country, folk to bluegrass genres.
On Sunday, May 18th, the Garden Terrace is the place to wine
down. From 11am-4pm, you may relax to the music of the
Occasional Mustache Band. This local band has a unique blend of
country, blues, rock and folk music. Pulcinella Wood Fired Pizza will
be selling authentic artisan pizzas and signature salads. Wine will be
available by the glass or bottle so you can sit back and relax.
May is also the month that the winery will unveil the full line-up
of Cavern Select wine. Cavern Select is a new, direct to consumer
only, line of wine made in limited quantity. The wines are the best of
the best, grapes and varietals are selected by winemaker, Don Brady,
and aged in the finest oak. The line-up includes Roussanne,
Grenache, Malbec, Cabernet Sauvignon, Petite Sirah and a Rhne
blend known as Pape de Robles. The wines are available to wine club
members and tasting room visitors. Each year, the line-up with be
determined based on what the winemaker deems to be the best of the
vintage. The wines are available for tasting from the reserve tasting
list for a $10 tasting fee. A house list is also available for a $5 tasting
fee with a full line of Robert Hall wines that are food-friendly and
age-worthy. Tasting fees are fully refundable with the purchase of one

Like most passionate wine enthusiasts, a great epiphany led Joe


Davis to his calling as a winemaker...
While in college on an athletic scholarship, Davis, the son of a
Monterey California fishing family, took a job in a wine shop. One
Christmas, a good customer brought Joe a gift of a 1978 Clos de la
Roche Grand Cru, Domaine Dujac. One sip and he was completely
taken with the flavor and sheer deliciousness of the wine.To have
winemaking as a life pursuit and to make wine like this, he
thought, would be the most wonderful thing in the world. And so
his quest began.
Joe voraciously read everything he could find that was wine
related and enrolled in UC Davis graduate program. In 1985, he
met and went to work for Dan Lee of Morgan Winery. While
primarily making award-winning Chardonnay, Davis never lost
sight of that fantastic Burgundy and in 1990, he presented a classic
Pinot Noir production plan to Morgan Winery.
His original plan included techniques Davis applies today to his
Arcadian Winery Pinot Noir; whole cluster fruit is hand picked and
is sorted early in the day to ensure chilled fruit. Obviously, not all
vintages are the same, the recipe might change, but by using these
methods consistently, I impart a common thread among my wines
that translates into my style says Davis. He employed these procedures for all of his Pinot Noir vintages (1986-1994) at Morgan and
then took this knowledge to a general managers position at
Bernardus Winery. Finally, in 1996, on his own and ready to fulfill
his dream, he released Arcadian Winerys first vintage of Chardonnay
to rave reviews.
Joe realized another dream in late November 2011 when he
opened his long-anticipated tasting room in the Lompoc Wine

Canyons Focus on Syrah
Ballard Canyon, Californias newest American Viticulural Area
(AVA), lies in the heart of the Santa Ynez Valley. Stolpman Vineyards,
the largest and founding vineyard of Ballard Canyon, in turn, is
located in the center of the new AVAs boundaries.
Stolpman Vineyards 92 acres of Syrah vines represent the AVAs
focus on the varietal. Over 60% of Ballard Canyons vineyards are
Syrah and Pete Stolpman, President of the Ballard Canyon
Winegrowers Alliance, explains that Ballard Canyon is the only
viticultural area in America dedicated to Syrah.
Syrahs from Ballard Canyon display bright, fresh fruit aromas and
lively, balanced profiles. The vibrant style comes from Ballard
Canyons exposure to the Pacific Ocean. The maritime influences,
namely morning fog, high afternoon winds and low night-time
temperatures; ensure the grapes retain balancing acidity.
Stolpman Vineyards Founding Partner, Tom Stolpman,
experimented with sixteen different grape varietals before he was
convinced that Syrah is the best match for Ballard Canyon. Tom
learned that Ballard Canyon is too cold and extreme for Bordeaux
varietals like Cabernet Sauvignon and Merlot. While Chardonnay
adapts well to the climate, Tom tasted true magic in the early Syrahs
he tasted from his vineyard.
Today, Tom has handed over the reins of the operation to

winemaker Sashi Moorman, vineyard manager Ruben Solorzano, and


his son, Peter Stolpman. Together, the team focuses on perfecting
their viticultural techniques and winemaking processes to further
push the envelope of world-class Syrah.
Each year, the Stolpmans make a handful of different Syrahs from
the vineyard. The flagship 2011 Estate Syrah represents every block
on the vineyard and can be found on restaurant wine lists from
Munich to Tokyo. The grapes for the limited production 2011
Hilltops Syrah are hand-selected from the ridgelines by the full-time
vineyard crew, La Cuadrilla. The first Syrah to be released from the
benchmark 2012 vintage, Angeli Syrah, represents the very best
barrels of Syrah from each vintage.
All of the wines available in Stolpman Vineyards Los Olivos
Tasting Room (open seven days, 2434 Alamo Pintado Ave., Los
Olivos) and the Lompoc Winery (open Friday through Sunday, 1700
Industrial Way Unit B, Lompoc) are grown on the organically farmed
Ballard Canyon estate.
Later this year, Stolpman Vineyards will release the first Syrahs to
be labeled under the new AVA. The new wines will be bottled in a
custom engraved glass-mold with the words Ballard Canyon
encircling the neck. The custom bottle will come to signify the finest
Syrah crafted in the New World.

Imagine a tasting room which houses two of the most well-known


small lot winemakers in Santa Barbara. Well, imagine no more - the
Loring/Cargasacchi Tasting Room is reality. Relatively new in the
Santa Ynez Valley, this humble tasting room with its simple, clean
lines and look is the perfect subtle backdrop for some killer juice.
Winemakers Peter Cargasacchi of Cargasacchi and Point Conception
labels joined forces with Brian Loring of Loring Wine Company and
have created the latest most in-demand tasting experience.
The tasting room itself has plenty of space inside with two bars
and a picnic area outside. Cargasacchi has new 2012 varietals in the
tasting room including Merlot and a Pinot-Syrah blend, and Loring
just released the 2012 Pinot Noirs from their southern-most
vineyards (a large number of his 2012 Pinots just scored 90 and
above in Wine Spectator).
The 8,500 cases that Loring makes consist of 13 Pinot Noirs, four
Chardonnays, as well as Cabernet Sauvignon, Mourvdre, Grenache
and a few blends. There are 23 wines currently available with prices
ranging from $24 to $99, deriving fruit from Paso Robles, Monterey,

Sonoma and Santa Barbara. These wines aren't overloaded with


tannin, so theyre ready to drink right away, Loring says. The
awesome structure of each wines comes from the acidity, which
keeps the wine bright and fresh despite their richness. Lorings
philosophy on making wine is that the fruit is all that matters. What
happens in the vineyard determines the quality of the wine - I cant
make it better - I can only screw it up, he says. Perhaps this is why
he is extremely picky when choosing vineyards to buy grapes from.
Not only am I looking for the right soil, micro-climate and clones,
Im also looking for a grower with the same passion and dedication
to producing great wine that I have. In other words, a total Pinot
freak!
In keeping with this passion for Pinot Noir, Cargasacchi wines
include estate fruit sourced Pinot Noir and an unusual late harvest
Pinot Grigio as well as his Pinot Noir, Chardonnay, Pinot Grigio and
Syrah under the Point Concepcin label from estate and purchased
fruit. But it is Peters out-of-the-way Jalama Vineyard that proves the
most intriguing, and with a remote vineyard site, things can get
tricky. The area is the bed of an ancient sea so there are large
deposits of diatomaceous earth in and around the vineyards,
Cargasacchi says. Farming the grapes here for his Pinot Noir is
challenging because the area is more extreme weather and the
limestone soils produce a discernable edge and minerality in these
wines. Having been a farming family for over 100 years, means that
Peter has a vast knowledge of exactly how to farm grapes. Where a
vine grows and what type of soil its planted on and its exposure
matters a lot, but good farming and getting proper ripeness is the real
essence of making good wine, he says. You can have the most
perfect spot for a vine on earth but if you don't take care of it, you
can forget about making decent wine. And with this kind of focus
both Loring and Cargasacchi wines will turn your head.

throughout the event. Big Toms BBQ is on hand with tri-tip

Firestone Vineyard was one of the first commercial estate


vineyards planted in Santa Barbara and true to that progressive
thinking, they continue to look forward with new wines, new
markets and a commitment to making the best wines in Santa
Barbara County. The Firestone name is probably familiar to most
people; they were the family that created Firestone tires.
Today winemaker Paul Warson, who came on board at Firestone
after 14 years making wine in the Napa Valley, is putting his own
stamp on Firestones aromatic white wines and their traditional
Bordeaux reds. Warson oversees over 400 acres of grapevines
which translates to about 100,000 cases of wine each year, making
them a major player in Santa Barbara County. Its been a whirlwind
three-and-a-half years since I took over the winemaking here at
Firestone Vineyards, Warson says. It seems that we need to move
faster and faster to stay in the same place, or keep up with the latest
accomplishments for that matter. We have received some terrific
accolades from the media and press in the last year which has gone
a long way in expanding Firestone into new markets.
And Firestone is also one of the few wineries in the area who
offer complimentary public tours daily at 11:15 a.m., 1:15 p.m.
and 3:15 p.m. After the 30-minute in-depth tour you can picnic
outside on the verdant lawns and see for yourself the vineyards
which have been planted on a series of mesas, which have gravelly
sub-soils, perfect for keeping the vines healthy and well-drained.
The vineyards sites are ideally oriented to capture the sun and
breezes for perfect exposure to maximize the grape flavors. At the
winery things are busier than ever, says Warson. Last year saw the
inaugural release of Proximity 26, our flagship red wine. In the next
few weeks Paul says he will be bottling the 2010 vintage of
Proximity 26, and a new addition to the Firestone family, Proximity
26 Cabernet Sauvignon. As usual our wine club releases continue
to highlight our tasting room only wines, notably our Reserve
Chardonnay, Clone 174 Syrah and our Cabernet Franc, Warson
adds.
So if youre a newbie wine lover or a confident connoisseur you
will find wines that are compatible with your personal tastes. The
spacious tasting room is replete with soft wood tones, and tiled
floors, reminiscent of a ranch house with views out to one of their
vineyards. The tasting room also offers a plethora of gift items in
addition to wine. Their bottle prices range from $15 to $60, with a
vast majority being under $25.
Their Firestone Concert Series, which are normally held every
Friday starting in May until the end of September 2013, and are the
ideal way to spend clear warm summer nights in Santa Barbara

I simply love Rhone varieties because of many visits to that part


of France, says Andrew Murray. It is Grenache, Syrah and
Mourvdre, as stand alone wines or blends that has Murray so

Since 1984 Byron Winery has had a commitment to make Pinot


Noir, long before Pinot Noir was ever fashionable. With 11 different
Pinot Noirs and five Chardonnays as their main offerings they are one
of the vanguards of the Santa Barbara wine industry. In fact they own
the first commercial vineyard in Santa Barbara County, Nielsons
Vineyard, first established in 1964. And Byron is celebrating its 30th
anniversary in 2014! However winemaker Jonathan Nagy has
expanded their offerings to include Pinot Blanc, a unique varietal
with crisp aromas of orange blossom, jasmine, honey, pear and
apricot flavors and its a natural fit for the spring and summer
months. Additionally a GSM (Grenache, Syrah, Mourvdre) blend is
offered as well.
We are very proud of all of our Pinot Noirs and Chardonnays,
and we are about to release a Pinot Geek Flight that will comprise all
of our high-end, small-lot handcrafted Pinot Noirs, says Estate
Manager Pati Wilkinson. Certainly this is Pinot Noir country and no
one has the longevity with this grape more than Byron.
One of the best ways to experience their wines is their Wine Club
Lounge which is available for exclusive bookings for members, with a
capacity for 20 people. This allows it to be intimate and private
enough for reunions, anniversaries, and birthday celebrations. We
personalize the tasting menus for the guests and they can have a

catered meal or we can provide a selection of cheeses, dried fruit and


nuts, Wilkinson says. You can pick up a bottle of Byron from $16 to
$60, and sample their general tasting flight of five wines for just $10

Dragonette Cellars is well known for two things - its great wines
and the knowledge and enthusiasm of its owners. When people write
rave reviews of the wines, such as the 2012 Sauvignon Blanc from
Happy Canyon, they often also include praise of the owners for their
affability and knowledge of wine.
The winery is a family-run business owned by John and Steve
Dragonette and their close friend Brandon Sparks-Gillis. They are
passionately committed to wine quality, and to that end, they
personally perform all of the vineyard and winemaking processes
themselves.
Dragonette Cellars logo, the alchemist symbol for liquid gold, also
called the elixir of life, is a fitting way to describe the owners
winemaking philosophy. They believe that great wines take patience
and hard effort to produce. They pay attention to the small details,
and do such things as walk the vineyard rows, fine-tuning the
process. Every decision we make in the vineyards and cellar is aimed
at producing a wine of balance and complexity.
Wine critics agree that Dragonette Cellars has produced some
exceptional wines. In a recent publication of Stephen Tanzers
International Wine Cellar, many Dragonette wines received good
reviews, including the 2012 Sauvignon Blanc from Happy Canyon

which received 91 points, and the Sauvignon Blanc Grassini Family


Vineyard from Happy Canyon which received 92 points.

Toretti Family Vineyard


Santa Maria is a bit of a difficult place to describe to Pinot-philes
who havent been there. Its basically a cowboy town full of ranchers
and farmers and big, manly trucks. Lots of cowboy hats, cowboy
boots and big belt buckles. Not exactly not the backdrop most
imagine of when daydreaming about wine country, especially that of
the refined Pinot Noir.
Nevertheless, the Santa Maria Valley produces bar none, some of
the finest Pinot Noirs that the entire state of California has to offer.
You just have to come to grips with the image of cowboys and an
open fire grill lined with sizzling beef in your fantasy.
One such cowboy figure is Bob Torres. Torres family has been in
Santa Barbara Countys Santa Maria Valley for over 100 years. A local
legend himself since he opened his first Pappys restaurant in 1957,
Bob is an old-school Santa Maria guy, with the cowboy hat, cowboy
boots and belt buckle to prove it. He loves this land.
Bob planted five acres of vines on his Santa Maria estate in 2000.
The quality of the fruit was recognized immediately, and Caymus
Chuck Wagner snatched up all he could get. In 2006 Torres bottled
under his own label Toretti Family Vineyard.
Forget the images of cowboy country when you enter their newly
opened Los Olivos tasting room. It has a relaxed cowboy atmosphere
and reflects their rich family history. Bobs daughter, Milena manages
the tasting room and will welcome you.

The motto at Sort This Out Cellars is Good TimesGreat Wines,


and thats exactly what visitors to this unique tasting room can
expect. Sort This Out Cellars is a boutique winery located in the
heart of the Santa Ynez Valley, although after walking through the
tasting room doors, the atmosphere is more akin to classic Vegas.
For owner and winemaker, Michael Cobb, the inspiration for the
winerys image came from an old picture of the Rat Pack standing
outside The Sands hotel in 1961, evoking a time when men had
character and women had curves. The wines of Sort This Out Cellars
capture the finest flavors from California vineyards, and are styled
with classy labels with names like Shannon Million Suited
Chardonnay, Say Hey Viognier, Suited Muscat, Million Dollar
Cabernet Sauvignon and Oh My Gosh Grenache. Also not to be
missed are the Viva Las Vegas wines, and the highly sought after
VinoNostra red wines, with blends like Mobsters and Bootleggers
inspired by Prohibition era winemakers.
These are wines that pair with good times and good friends, said
Cobb. We make wines that are just as at home at the poker table as
at the dinner table.
This year, Sort This Out Cellars celebrated their second year for
the pinup contest to find the next Miss Sort This Out Cellars. This
years winner is Bayley Bombshell, a 25-year-old helicopter
dispatcher. Her winning pinup picture features her in front of a
World War II era painting (painted by the multi-talented Bombshell),
and pays tribute to the countless sacrifices our veterans have made.
In addition to tasting these delicious wines, visitors can enjoy
vintage soda pop and wine cocktails, as well as live music every

Since 2008, Fontes and Phillips Winery has focused on creating a


portfolio of small-lot wines from world-class Santa Barbara County
vineyards. Alan Phillips and his wife Rochelle Fontes-Phillips bring
over thirty-five years of wine industry experience to their boutique,
family-owned winery. Alan graduated from UC Davis with a BS in
Enology and spent the first 20 years of his career working at several
wineries in Napa Valley, the Santa Cruz Mountains and Santa
Babrara, including consulting jobs in New Zealand, Germany, France,
Spain and Portugal. Rochelle developed her career in wine
compliance and accounting, and in 1998 they decided to move to
Santa Ynez to help Bill Foley launch Foley Estates and Lincourt.
In 2008 they decided to start their own winery to showcase the
distinct varietals and vineyards of Santa Barbara and Santa Rita Hills
including Sierra Madre Vineyard, La Encantada Vineyard and Camp
4 Vineyard. The Fontes and Phillips portfolio includes less than
1,500 cases of wine annually of Chardonnay, Pinot Noir, Sauvignon
Blanc, and the ever-popular Panky Ros. The term Panky refers to
anything thats really cool, which is exactly what you can expect from

Then you move to another place
within the winery to sample the

Another popular tasting experience that can be part of a tour or a

Your guide takes a wine thief, a
special siphon placed into a hole in
the top of a barrel to extract tasting
samples of a maturing wine. The

wine is like in the middle of developing its full potential.

A Sit Down Tasting usually


requires an appointment, and there
may be a slightly higher fee than a
wine bar fee. Seated in an elegant
room, you are poured several wines
by your winery host. Expect your
host to describe the unique characteristics of each wine and how it
was made.

Walk Around Tasting

The most common tasting experience is a Wine Bar Tasting. You


step up to the bar where typically a
list of wines being poured is
displayed. Expect to pay a tasting
fee between $10-$40. Some tasting
bars will offer you the option to
taste a library or reserve wine.
Exercising this option increases the
fee, but will allow you to taste very
unique, old or rare wines.
