The main problem of cocoa plantation in Indonesia is the low productivity and quality of cocoa beans Sulawesi cacao beans are mostly unfermented, and Ghana and other West African mostly fermented. Fermentation and drying is needed to produce a good quality of cocoa beans related to flavour and taste
