Nicks Net Carb Free Focaccia Bread

Ingredients 2 cups flax seed meal (read bottom of page) 1 tablespoon baking powder 2 tablespoons sugar equivalent artificial sweetener 5 eggs cup vegetable oil 3 tablespoons melted butter cup water 10x15 pan

Directions

Preheat oven to 350 F. Mix all the dry ingredients into a large bowl. Make sure they are mixed well. Add wet ingredients to dry ingredients. I found a mixer is overkill. Mix well with a wisk. Let stand for 2 minutes. Pour mixture onto pan and spread out evenly. Bake until top is visibly brown (25-35 minutes). Let cool and slice as desired.

Notes: I used a spice grinder to grind the flax seed meal to a finer grain (Drago gets full credit for that idea). The original recipe that inspired me came out with very grainy. Take the extra step of grinding the flax seed. It makes the entire recipe work. When measuring I measured the 2 cups before grinding. Use parchment paper with oil. This stuff is sticky.
