Horchata serves four

ingredients;

2 1/4 cups long grain rice


3 cups water
1 1/4 cups blancvhed almonds
2 tsp cinnamon
finely grated ring of 1 lime, plus strips of rind to decorate
1/4 cup sugar

method;
1- Tip the rice into a seive and rince thorougly under cold running water. Drain,
tip into a large bowl and pour over the water. Cover and soak for at least 2
hours.

2-Drain the rice, reserving 2 1/2 cups of the soaking liquid. Spoon the rice into
a food processor and grind as finely as possible.

3-Add the almonds to the processor and continue to grind in the same way until
fine ground.

4- Add the cinnamon, grated lime rind and sugar to the ground rice and ground
almonds. Add the reserved soaking water from the rice and mix until all the sugar
has disolved.

5- Serve in tall glasses with ice cubes. Decorate with strips of lime rind.
