Dohkhleh Recipe

Things youll need:


(Serves Two)

lb 3 in. length 3 tbsp 2-3 x 1-2 x 1 tbsp

Pork head, pork shoulder, or other tender pork meat Pork brain Ginger, mashed Green Thai chilies, pureed Red onion, sliced thinly Salt, to taste

Instructions: 1) Boil meat from pork head, pork shoulder, or other tender meat for at least two hours or until soft. Feel periodically to adjust time. 2) Within the last 30-45 minutes, add brain to a small bowl and set atop boiling pork meat. Cover for the remaining time. 3) Set brain aside and cut boiled pork meat into small pieces, approximately 1x1 cm cubes. 4) Cut or mash ginger and chili pepper, separately. Thinly slice onion. Thoroughly mix together with half of the brain or enough for one meals servings. Set remaining brain aside for next-day leftovers. 5) Add salt to taste.
