MUMS HANDVO RECIPE

For the Batter 2 Cups Rice 1 Cup Chana Dal Cup Urad Dal

Soak all the above overnight & the next day in the morning wash & blend with cup of yoghurt, make sure the mixture is thick in texture when blending. Leave mixture covered at room temperature until evening when its fermented & ready. Preparation to batter once its ready Add salt to taste to the batter 1 teaspoon haldi powder 2 tsp sugar 2 tsp cooking oil Ground green chillies Green chopped coriander leaves Ground garlic 1 handful green peas Half grated dudhi 1 grated carrot 1 grated onion ( grate on thick side )

*Make sure you remove all the water from the grated vegetables i.e. dudhi, carrot & onion by squeezing it out before adding it to the batter. Mix all the dry vegetables to the batter once combined gently mix 1 Packet of ENO lemon flavour 4.5g fruit salt to it. Grease an oven proof aluminium baking dish with oil and pour the batter to it. For Tadka Heat 4/5 tsp of oil Add 1 tsp mustard seeds 1 tsp Cumin seeds tsp hing ( asafoetida powder ) 3 tsp sesame seeds Few curry leaves

After all the spices have crackled add the tadka on top of the mixture and bake for 45 50 mins. On gas mark 4-5 or 180 - 190 centigrade until golden brown & crispy. Make sure to keep checking by inserting with knife to see if cooked in between once it has browned. Enjoy... Bon apetite!!!!!
