Oatmeal Pale Ale

Ingredients:
6.75 lbs Golden Light LME 2.25 lbs Flaked Oats 13.6 oz of Crystal grains 3.25 oz Centenial Hops 3.5 oz Citra Hops 1 tsp Irish Moss White Labs #WLP007 (Dry English Ale)

Directions:
1. Fill your pot with 2 gallons of water and bring temperature up to 165 degrees 2. Place grains into bag and place in water for 30 minutes 3. After the 30 minutes, remove bag. Be sure not to squeeze the bag, let it drain on its own. Squeezing the bag will allow tannins into the beer which will make the beer tart. 4. Stir in the Malt Extract, mix until dissolved and bring to a slow boil 5. After boil has started, add .25 ounce of the Centenial hops (bitter) 6. Boil for 30 minutes 7. after the 30 minutes, add .5 ounce of Citra Hops (flavor) 8. Boil for 20 minutes, then add .5 oz of the Centenial Hops and .5 oz of the Citra Hops (Aroma). Add in the Irish moss at this time also 9. Boil for 10 minutes, then remove from heat and add 1 oz of the Centenial Hops and 1 oz of the Citra Hops. 10 Once the wort temperature has dropped to between 75-80 degrees, rack into your fermenting bucket 11. Raise the water level to 5 gallons and then pitch the yeast 12. Once the fermentation is complete (7 days), add 1.5 oz of the Centenial Hops and 1.5 oz of the Citra Hops. Let stand for 3 days 13. After the 3 days are up, rack into a keg and carbonate or rack into a bucket with priming sugar, bottle, let sit for at least 1 week, then enjoy.
