French Fruit Clafouti

This a time-honored favorite French recipe that is made by baking fresh fruit in a batter similar to pancake batter. The result is a custard-like cake chock-full of fruit. Traditionally this is made with cherries, but it could be made with any fruit you would use to make pie. When I tested this recipe and offered my husband a taste, he took a bite and said, "Oh, this is the best!" and proceeded to eat the whole sample! makes 2 servings 2 cups fruit, peeled, cored and slices, if needed 1/4 cup milk 3 tablespoons butter, melted and cooled 1 large egg, beaten lightly 1/4 teaspoon vanilla extract 1/4 teaspoon almond extract 2 tablespoons honey or agave 1/4 cup flour 1/2 teaspoon baking powder a pinch of salt 1. Preheat the oven to 350 degrees F. 2. Place the fruit in 2 4-inch ramekins. 3. In a medium bowl, whisk the milk, butter, eggs, vanilla and almond extracts, and honey or agave until smooth. 4. In another bowl whisk together the flour, baking powder, then stir in the milk mixture, stirring until the batter is combined well. 5. Pour the batter over the fruit. 6. Bake in the middle of the oven for 40 minutes, or until golden brown. 7. Let cool on a rack for 15 minutes. Serve warm.
