The Daiquiri is thought to have been developed in the late 1800's in Cuba as a medicinal treatment for malaria.

Today it is enjoyed as a light cocktail and can be blended for a Frozen Daiquiri.

Ingredients:

1 1/2 oz light rum 3/4 oz lime juice 1/4 oz sugar syrup

Preparation:
1. Pour the light rum, lime juice and sugar syrup into a shaker with ice cubes. 2. Shake well. 3. Strain into a chilled cocktail glass. The Mojito has risen in the ranks to become of the most popular cocktails. It originated in Cuba, was second to the Daiquiri on Ernest Hemmingway's list of favorite cocktails and, since the 1980's, has become one of the more fashionable tropical cocktails. It's very simple, using mint and lime to accent the rum. Choose a premium rum like Cruzan, Appleton or Mount Gay for a spectacular Mojito.

Ingredients:

2 tsp sugar 6-8 mint leaves club soda 1 lime, halved 2 oz light rum mint sprig for garnish

Preparation:
1. 2. 3. 4. 5. 6. 7. 8. 9. Place the sugar, the mint leaves, and a little club soda into a highball glass. Muddle well to dissolve the sugar and to release the mint flavor. Squeeze the juice from both halves of the lime into the glass. Drop one half of the lime into the glass. Add the rum. Stir well. Fill the glass with ice cubes. Add the rest of the club soda. Garnish with the mint sprig.

Nothing is better in the morning (as a brunch cocktail or hangover cure) or on a cold day than the spicy tomato flavor of a Bloody Mary. You can make it as spicy or mild as you want, using either more or less hot sauce, or (better yet) add the spice of tequila by making a Bloody Maria. Bloody Marys are often garnished with a celery stalk, but many will either use a pickle spear or both. For a non-alcoholic version try a Virgin Mary and you can also make a pitchersized batch by using a Bloody Mary mix like this one.

Ingredients:

3 oz tomato juice 1 1/2 oz vodka 1/2 oz lemon juice 1 dash of Worcestershire sauce celery salt ground pepper hot pepper sauce to taste celery stalk and/or pickle spear for garnish lemon and/or lime wedge for garnish

Preparation:
1. 2. 3. 4. Build the liquid ingredients in a highball glass over ice cubes. Mix well. Add the seasonings to taste. Garnish with the lemon and/or lime wedge and celery stalk.
