Dominiques Lemon Pie You will need a pie form of about 26 cm in diameter.

Prepare the short pastry (if you are not going to buy a ready-made one): 300 g of flour 150 g of cold butter from the fridge, cut into small cubes 2 cold eggs from the fridge 100 g sugar a pinch of salt the zest of one organic lemon (ground) Make a little mound of flour and sugar, at the centre put the eggs, lemon zest and butter. Mix with a fork, then quickly with the hands until you get a homogenous dough it should not get too warm. Wrap into plastic foil and put in the fridge for a minimum of 30 minutes. For the filling: 2 eggs 100 g sugar the fresh juice of 3 lemons 80 g butter Melt the butter in with the double-boiler method (=bain-marie), then add all the other ingredients and stir well. Preheat the oven at 180 Celsius. Put the short pastry into the pie form and make sure that the borders come a little over the edges. Pour the lemon mix onto it and put in the oven for about 30-40 minutes. It tastes lovely!
