REGION: Bairrada CLASSIFICATION: DOP Denominao de Origem de Provenincia YEAR: 2012 GRAPES: Touriga-Nacional. Grapes grown in clay-calcareous soils, manual harvest and transport to the winery in small boxes. VINIFICATION: Grapes picked by hand, pressed and fermented in barrel of (300L) in a room with controlled temperature (16 C); work of the wine in barrel 'lies sur fines' and aging in oak barrels from fermentation until prepare for bottling (September -March). BOTTLING: JUNE 2012, OBTAINED 660 BOTTLES. DATA_______________________________ GRADUATION: 12,5% Alc. Vol. TOTAL ACIDITY: --- g/L Ac. Tart. RESIDUAL SUGAR: <1,5 g/L TASTING NOTES: Bright light pink, with light red shades. Wine of the finest fresh red fruit flavors, good complexity and notes of maturation on the yeast fermentation, and in the mouth it is rich, fresh aroma with good acidity intense and persistent aftertaste complex. MATURATION: STAGE BOTTLED IN A CONTROLLED ENVIRONMENT. CONSERVATION: BOTTLES IN HUMIDITY ENVIRONMENT OF 60-70% AND TEMPERATURES OF 15C (+-2). CONSUMPTION: Consume preferably up to 4 years after bottling. Serve at 10 GASTRONOMY: Great for early meal with several entries, goes well with dishes, cataplanas with some elaboration in the making (oven baked sauces or butter), and cheese.
