Coconut,scraped 1 cup
Butter 1/4 cup
Sugar 1 cup
Eggs 2
Vanilla essence a few drops
Refined flour (maida) 3/4 cup
Baking powder 1 teaspoon
Cinnamon powder 1 teaspoon
Nutmeg powder 1/4 teaspoon
Condensed milk 1/2 cup
METHOD
Preheat the oven to 180 C. Lightly grease a silicon cake mould. Cream butter
and sugar in a bowl. Add eggs and mix. Add vanilla essence and mix. Sift
refined flour, baking powder, cinnamon powder and nutmeg powder into the
bowl and mix. Add coconut and mix well. Add condensed milk and mix well.
Pour the batter into the prepared cake mould and level the surface. Sprinkle
some coconut over the top. Bake in the preheated oven for half an hour. Cool,
cut into slices and serve.
