White Chocolate Pear Bread

200 g good quality white chocolate (Lindt white chocolate)

1 teaspoon salt
1 teaspoon ground cinnamon

Directions
1. Preheat oven to 350

F (175

C). Grease two 84 loaf pans. Sprinkle sugar inside
the pans and tilt the pans to coat the entirety of the pans with the sugar.
2. In a large mixing bowl, combine oil, apple sauce, sugar, and eggs. Mix with a wooden
spoon until smooth. Stir in pears, pecans, chocolate, and vanilla.
3. In another bowl, combine our, baking soda, baking powder, salt, cinnamon, and
nutmeg. Stir dry ingredients into the pear mixture; mix until just combined. Pour
batter into prepared loaf pans.
4. Bake in preheated oven for 60 minutes, until a toothpick inserted into the centre of
a loaf comes out clean. Allow loaves to cool in pans for 10 minutes before inverting
onto a wire rack to cool completely.
