    This recipe makes 12 carrot cookies using margarine, sugar, vanilla or almond essence, grated carrot, and self-raising or plain flour with baking powder. The margarine and sugar are beaten until fluffy, then the flavoring and carrot are added. The flour or flour/baking powder mixture is gently stirred in. Spoonfuls are dropped into greased patty pans and baked for 20 minutes at 220C/gas mark 7, sprinkling extra sugar on top.

    Carrot Cookies - makes 12

    1 tblespn marg
    2 tblespns sugar
    few drops vanilla or almond essence
    4 tblespns raw grated carrot
    6 tblespns sr flour OR same of pln flour plus 0.5 tspn baking pwder
    Beat marg/sugar til light and fluffy
    Beat in flavouring and carrot
    Gently stir in flour/baking pwder
    Drop spoonfuls into small greased "patty pans" (presume small shallow
    bun tins not muffins)
    Sprinkle extra sugar on top
    20 mins gas 7/220C
