Apple Cinnamon Muffins Ingredients 250 ml flour (1 cup) 125 ml oats (1/2 cup) 125 ml sugar (1/2 cup) 5 ml baking powder (1tsp) 2 ml baking soda (1/2 tsp) 1 ml salt (1/4 tsp) 125 ml water (1/2 cup) = Legg y = 60 ml oil (1/4 cup) <= 1 apple chopped into small pieces 3 ml cinnamon 15 ml brown sugar ef | ‘ection: 1. Preheat oven to 375 F 2. Line muffin pan with muffin liners or spray with PAM (6 muffins) 3. Cut apples into tiny pieces and mix with cinnamon 4. Mix dry ingredients together ina medium bowl, 5. Break open egg in another larger bowl and beat with a fork. 6. Add oil and water to egg and beat again. 7. Pour dry mixture into liquid mixture and stir with a minimum of strokes. Over mixing will result in a tough textured muffin! Just stir until dry ingredients are moistened. Batter will be lumpy. 8. Combine the chopped apple, cinnamon and brown sugar in a small bow 9. Add the apple/cinnamon mix to the batter, Mix with a MINIMUM of strokes 10. Using your spoon and a rubber spatula fill muffin tins with batter and bake for 18-20 minutes or until tops are lightly browned and a toothpick inserted comes out clean. 11, Let cool for 5 minutes
