Spread equal amount of refried beans on half of each tortilla flat Chop all veggies Saut peppers and onion with oil for about 5 minutes Sprinkle all veggies and grated cheese on each half, fold over Place on cookie sheet and bake for 10 minutes Cut each quesadilla in half- so there are 4 servings 8. Serve with salsa and sour cream
