I am excit ed t o announce t hat t he Sport s Nut rit ion Sub-Commit t ee of t he SDA wil l be
having it s f irst meet ing on December 10t h, 2015 at 2pm. Our guest speaker wil l be Doret t e
Franks, who was a previous graduat e at SFSU in t he Diet et ics program. Those who at t ended
t he Diet et ic Int ernship workshop wil l remember her and recal l t hat she just recent l y passed
her exam t o become a f ul l f l edged Regist ered Diet it ian.

Modif icat ion f rom popsugar
Ingredient s
4 tbsp butter
3-4 small apples, peeled and roughly chopped
3 tsp cinnamon
1 tsp ground ginger
8 tbsp dark brown sugar
1 cup fresh or frozen cranberries
4 cups hot water
3 cups old-fashioned oats
1-1/ 2 tsp salt
1/ 8 tsp freshly grated nutmeg
1 cup toasted pecans or walnuts, chopped
1/ 2 cup milk
1/ 2 cup unsweetened applesauce
1/ 4 cup pure maple syrup
1 tsp vanilla extract (optional)
Direct ions
Preheat oven to 350º F; lightly grease a 2- to 3-quart casserole dish.
Melt 2 tbsp butter in a skillet over medium heat; add the apples, cinnamon, ginger, 2 tsp brown sugar,
and a pinch of salt.
Cook, stirring occasionally, for about 15 minutes, or until the apples have softened and caramelize.
Take off of the heat then add the cranberries, stirring to coat with the spice-butter mixture.
Meanwhile, add remaining 2 tbsp butter to a large bowl, cover, and allow to stand for 20 minutes.
Add the old-fashioned oats, salt, remaining 6 tbsp brown sugar, nutmeg, and about half of the
chopped nuts to the steel-cut oats, mix well .
Whisk together the milk, applesauce, maple syrup, and vanilla, and then fold it into the oat mixture.
Add about 3/ 4 of the fruit to the casserole dish; spread it out into an even layer and top with the oat
mixture. Top with the remaining fruit and the second half of the nuts, and bake uncovered for 35-40
minutes or until set in the center.
Allow to cool slightly and serve with any topping desired.
