"What are your pl ans f or wint er break?"

Laura Duggan
"I'm looking forward to flying to
Chicago at the end of the month to
visit my two baby nieces!"

Kat ie Wil ks
"Over winter break I would like to reconnect with friends
and family. With endless hours of solitary study time, I find it
greatly important to step away and immerse yourself in love
and the people/ things that bring you joy. I would also like to
try new fitness experiences and dive into a few of my
neglected cookbooks."

Jackie Gayt on
"I plan to take full advantage of this winter break by
exploring Austin with my closest girlfriends and
surprising my boyfriend with his first ever trip to
New York!"

Regina Pel l igrino

"Honestly working out is number one; whether it?s running,
yoga or just going to the gym, because the most exercise I got
this semester was walking up the four flights of stairs to get
to our classes everyday. And also probably experimenting in
the kitchen with new recipes, having more time to get
outdoors and explore the city .. oh and sleep!"

Perrie Pun
"I will be snowboarding in Tahoe and building a
snowman with my nieces!"

Cran-appl e Oat Cobbl er

Ingredient s
4 tbsp butter
3-4 small apples, peeled and roughly chopped
3 tsp cinnamon
1 tsp ground ginger
8 tbsp dark brown sugar
1 cup fresh or frozen cranberries
4 cups hot water
3 cups old-fashioned oats
1-1/ 2 tsp salt
1/ 8 tsp freshly grated nutmeg
1 cup toasted pecans or walnuts, chopped
1/ 2 cup milk
1/ 2 cup unsweetened applesauce
1/ 4 cup pure maple syrup
1 tsp vanilla extract (optional)

Direct ions
Preheat oven to 350º F; lightly grease a 2- to 3-quart casserole dish.
Melt 2 tbsp butter in a skillet over medium heat; add the apples, cinnamon, ginger, 2 tsp brown sugar,
and a pinch of salt.
Cook, stirring occasionally, for about 15 minutes, or until the apples have softened and caramelize.
Take off of the heat then add the cranberries, stirring to coat with the spice-butter mixture.
Meanwhile, add remaining 2 tbsp butter to a large bowl, cover, and allow to stand for 20 minutes.
Add the old-fashioned oats, salt, remaining 6 tbsp brown sugar, nutmeg, and about half of the
chopped nuts to the steel-cut oats, mix well .
Whisk together the milk, applesauce, maple syrup, and vanilla, and then fold it into the oat mixture.
Add about 3/ 4 of the fruit to the casserole dish; spread it out into an even layer and top with the oat
mixture. Top with the remaining fruit and the second half of the nuts, and bake uncovered for 35-40
minutes or until set in the center.
Allow to cool slightly and serve with any topping desired.
