Homemade Kaya Recipe

(producing 1 kg of kaya)
400 ml of Coconut Milk
400 gm of Sugar
460 gm of eggs (7 medium sized eggs)
1 pandan leaf

1. Beat and stir the eggs until well mixed. Sieve the eggs through a fine
sieve.
2. Separate out 30 gm of sugar. Pour the rest into the eggs and stir until all
the sugar melt.
3. Heat up the water in a double boiler.
4. Pour the coconut milk in the mixture and stir until well mixed.
5. Place the container with the mixture into the boiler and stir in one
direction.
6. Heat up the remaining sugar in a nonstick wok until it turned brownish.
Pour all the caramel into the mixture and mix well.
7. Stir the mixture until the mixture thickened.
8. Place the cloth rapped lit on the pot and boil for 1 hour.
9. Take the pot out and stir the kaya until smooth.
10. Repeat step 8 and 9 twice more, remove the pandan leaf and leave the
kaya to cool.
