mahi-mahi fish filets


O Season fish fillets with salt and

pepper
O place them into the dish.
O If the fillets have skin on them, place
them skin side down.
O Cover, and refrigerate for 20 minutes
to marinate.
O Heat vegetable oil in a large skillet
over medium-high heat.

Kokoda
O Add tomatoes, capsicum, onion,

coconut cream and chili to marinated


fish
O stir gently to combine.
O Taste and season with salt and
pepper.
O Line a serving bowl with the lettuce
leaves.
O Spoon the kokoda onto the leaves.
