Cream of Potato Soup

45 ml (3 TBSP) margarine
50 ml (1/4 cup) chopped
onion

TSP pepper
375 ml (1 cups) water
375 ml (1 cups) milk

45 ml (3 TBSP) flour

2 potatoes

30 ml (2 TBSP) chicken
stock flavouring

Optional: Carrot, celery,


etc.

1. Wash, peel, and dice potatoes


2. Place potatoes in a microwave safe dish and cover with
water
3. Microwave potatoes for 10 minutes or until tender
4. Mix flour and water until smooth in a mixing bowl
5. Melt margarine in a pot, add onions and saut until
tender and clear (heat at #7)
6. Add flour mixture to onions (lower to medium heat #6)
in the pot
7. Stir in chicken stock flavouring until dissolved
8. Gradually add milk, stirring constantly
9. Bring mixture to a boil (heat #8)
10. Add potatoes, cook on medium heat, stirring
constantly until mixture thickens
11. Add salt and pepper to taste!
