PORK MENUDO

Ingredients:
½ kilo pork, cut into cubes
For marinade:
2 pieces lemon
1/4 c. soy sauce
½ tsp. black pepper

5 cloves of garlic, crushed


1 small red onion, chopped
1 small tomato, seeds removed and chopped
2 potatoes, cubed
1 small carrot, cubed
1 small red bell pepper, in strips
2 hotdogs, cut into bite-size pieces
1 small can of tomato sauce
2 kraft singles ( or any brand ) cheddar or American cheese OR ½ c. grated cheese

1) Marinate pork in lemon, soy sauce, and pepper for at least overnight, turning meat
pieces once in a while.

2) Saute garlic in a pan with 2 Tbsp. of oil until light brown. Add onions and tomatoes
until soft. Add meat (including marinade) into the pan. Add about ½ c. water, cover, and
simmer over medium-low heat setting for about 15 minutes.

3) Add potatoes and carrots. Pour about ½ a can of tomato sauce and stir well. Cover and
let simmer using low heat setting, for about 10 minutes, or until potatoes and carrots are
tender. Add bell peppers and hotdogs. Simmer for another 5 minutes.

4) If the sauce becomes too little, add a little bit more tomato sauce.*** If the sauce
becomes too sour, just add a mixture of ¼ c. warm water and 1 Tbsp. soy sauce to
even out taste.

5) Crumble kraft singles OR use ½ c. grated cheese , and add into the pan until melted,
stirring frequently. Cook through for about 5 minutes. Season with a pinch of sugar and
dash of black pepper before removing from heat.
