Hot Spinach Cheesecake

(Ellens)

Base Ingredients:

60g butter
¼ cup parmesan cheese
1 cup crushed cheese biscuits (i.e. Arnotts Country Cheese)

Method:

Melt butter, add biscuits and cheese, remove and press into 20cm spring form pan and refrigerate
for 30 min.

Top Ingredients:

2 packets frozen spinach


3 rashers bacon (chopped)
1 onion chopped
250g cream cheese
125g feta cheese
300g sour cream
4 eggs lightly beaten

Method:

1. Cook bacon and onion until tender.


2. Press liquid from spinach.
3. Beat cream cheese and feta cheese in a bowl.
4. Add sour cream and eggs to cheese mixture.
5. Stir in spinach, bacon and onion.
6. Pour into base and bake for 1hr 15min approx.
7. Remove from oven and sprinkle with parmesan cheese.
