Chocolate Yule log

Ingredients Filling Icing


Sponge 50g unsalted butter 100g unsalted butter
3 eggs 75g icing sugar 100g icing sugar
75g castor sugar 15g cocoa powder 100g melted chocolate
25g grated chocolate
25g cocoa
50g plain white flour
Method
Beat eggs until light and fluffy. Beat in sugar.
Fold in cocoa and flour.
Pour into a greaseproof lined 20 x 30cms (8" x 12")
baking tray.
Bake for 10 minutes at 200°C (400 F, Mk 6).
Turn out hot cake on to a clean tea towel.
Remove greaseproof and roll up sponge in the cloth.
Mix all filling ingredients together.
Gently unroll cold sponge, cover with filling and roll up
again.
Cream together butter and icing sugar, beat in melted
chocolate.
Cover sponge with icing and create texture using a fork.
