Grilled Chili Oil 

Potatoes

This is a simple potato packet side dish that you can prepare right along with the main course on the
grill. This dish is perfect for a weekday meal.

Prep Time: 13 minutes

Cook Time: 30 minutes

Total Time: 43 minutes

Ingredients:

 2-3 pounds red potatoes, cut into 1 inch cubes

 1 red bell pepper, cut into trips

 1 small onion, chopped

 2 tablespoons olive oil

 2 teaspoons chili powder

 1 teaspoon salt

 1/2 teaspoon garlic powder

 1/4 teaspoon red pepper flakes

 aluminum foil

Preparation:

Preheat grill for medium heat. Combine all ingredients in a large bowl and toss well to coat. Tear off
two very large pieces of foil to make a double-thick sheet. Place potatoes on the center of the sheet,
fold sides up to create a packet and to seal in juices. Place packet on grill and cook for 15 minutes.
Turn, and allow to cook for an additional 15-18 minutes. To serve, cut packet with kitchen shears,
allow to cool for a minute or two, then open foil enough to take out potatoes.
Yummy Dill Potatoes
Try these grilled potatoes next time you have a cookout. They will compliment just about any meat
and they are delicious too.

Yield: Serves 4 to 6 as a side dish

Ingredients:

 6-8 large new potatoes

 1/3 cup olive oil

 2 cloves garlic, minced

 1 teaspoon dried dill

 1/2 teaspoon salt

 1/2 teaspoon black pepper

 aluminum foil

Preparation:

Wash potatoes and cut in quarters. Place potato pieces in a resealable container. Mix together
remaining ingredients in a small bowl. Pour over potatoes, seal, and allow to marinade for 20-30
minutes. Preheat grill for medium heat. Take potatoes out of bag and place on a long sheet of
aluminum foil. Pour enough marinade over potatoes to coat them well. Place another piece of foil on
top and crimp edges to create a packet. Make three small holes on the top to allow steam through
while cooking. Place potato packet on the grill and cook for 30 minutes or until tender. Remove and
serve.
Garlic and Dill Grilled Potatoes

This tasty grilled potato dish is an easy and convenient side dish. Try it the next time you grill chicken
or fish for a quick and delicious weekday meal.

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: Serves 6

Ingredients:

 6 large potatoes, peeled and sliced

 1 onion, sliced

 1 cup monterey jack cheese

 3 cloves garlic, minced

 3 tablespoon butter or margarine

 1 tablespoon dill, chopped

 salt and pepper to taste


Preparation:

Preheat grill. Place potatoes topped with onions and butter, on a large sheet of aluminum foil. Top
with seasonings, dill, and garlic. Seal potatoes in foil and place on the grill. Cook for 20 minutes on
high heat. Turn potatoes once during cooking process. The last five minutes of cooking, open foil and
sprinkle potatoes with cheese. Reseal foil and cook an additional 5-7 minutes.
