Baked Pork Lechon

Ingredients

 2 kilogramsPork Belly
 2 leavesLaurel (Bay) Leaves
 1 wholeCinnamon Stick
 1 teaspoonWhole Black Peppercorns
 2 piecesStar Anise
 1 wholeRed Onion
 1 headGarlic
 3 TablespoonsSalt

Procedure

Boil pork belly with the laurel leaves, cinnamon stick, whole black pepper, star
anise, red onion, garlic, and salt for 30 minutes to an hour. Use enough water
to ensure the pork will boil evenly. Marinate the meat in the boiled water
overnight. While you preheat the oven (top and bottom heat) to 220ºC, remove
the belly from the water and let dry for 20 minutes. Bake for an hour or two till
the skin is golden brown.
