MISE EN PLACE: Pre-heat oven to 375 F (190 C) Grease and line baking sheets with parchment paper.

PROCEDURE: Mixing method: Creaming Method 1. Place the fat, sugars and salt in the mixing bowl. With the paddle attachment, cream these ingredients at low speed. Blend to a smooth paste. 2. Add eggs one at a time until completely absorbed. Add vanilla extract. 3. Sift in the flour and baking soda. Mix until just combined. Do not overmix. 4. Blend in chocolate chips last. Makeup method: Drop method 1. With a spoon or ice cream scoop, drop cookie batters on prepared baking sheets. 2. Do not overcrowd the cookies and allow space for spread.
