Stir-fried Beef with Ginger

Ingredients (serves 5) Nutrient Analysis (per serving)


400 g beef - sliced with fat removed
2 cm young ginger - shredded
2 cloves garlic - minced

1 small green or red capsicum - sliced

1 1/2 dsp wine
2 dsp oyster sauce Dietary Fibre 1g
1 dsp light soya sauce

1/2 tsp sugar
1 dsp cornflour

Garnishing
1 stalk spring onion
1 stalk coriander leaves

Method

1. Marinate sliced beef and refrigerate for 3 to 4 hours.


2. Heat oil and fry ginger and garlic until golden brown.
3. Add marinated beef slices and stir-fry over medium heat for 2 minutes.
4. Add sliced capsicum and water stir-fry for another 2 to 3 minutes.
5. Garnish and serve.

Useful tips:

• Young corn or celery may be added for variety.


• To cut beef into thin slices, partially freeze it first for about 30 minutes.
