Pippies

Serves 2 to 4

Ingredients

500 g Pippies Soaked in cold water for 1 hour Dash of light soy sauce 1 long Green shallot chopped XO Sauce (see below) 700 g Long Red chilli's deseeded and chopped 1 large Knob of Ginger chopped 8 Garlic Cloves chopped 50 g dried Shrimp soaked in hot water for 2 hours vegetable oil sea salt tablespoon caster sugar

XO Sauce

Ingredients
1. Place the XO paste in a fry pan and cook it out slowly until the raw flavour has gone, about 30 minutes to one hour.

2. Steam the pippies in water or stock until they just open. Add four tablespoons of the XO sauce and toss through.
