Fionas Tuna Suprise Ingredients

1 cup raw rice 2 tins tuna in oil 1 packet Chicken and Mushroom soup 125 ml grated cheddar cheese 1 red onion, finely chopped [ 500 ml water 15 ml finely chopped chives Instructions

Preparation
1. Cook rice and drain well 2. Preheat oven to 180C and grease an oven proof dish 3. Saut the onion in a little of the tuna oil 4. Add the flaked tuna to the onion and mix 5. Add soup powder to water and bring to the boil, stirring frequently 6. Add the tuna mixture and mix together well 7.Layer the rice and tuna mix, starting with a layer of rice. 9. Sprinkle chives and cheese on top 10. Bake for 30 mins until browned

NB: This idea came about when one of the boys had cooked rice and I didnt use it for the meal when I got home. I vary this in so many ways depends on what I have in the fridge. Variations

Add chopped leeks/ spring onion to the mix


Crumble some feta cheese on top Vary the cheeses used Use coconut milk in the mixture instead of soup add some Ina Paarman or similar spices
