Veg stuff
The story of the Daikon radish! We seed radishes in with our carrots because carrots are really slow to germinate. Radishes are the track stars of the veg world and pop right up so we know where our lines are. These daikon radishes must have really liked the soil....? lack of rain ? In any case they are awesome! nd broken! !ince they are interplanted with lil" baby carrot plants we can"t #ust use a a shovel$fork to dig them out. We had to pull them. nd pull them we did! %are...f...u..lll...yyyy& s'l'o'w'l'y& but alas many broke. They are still super legit. lso& Daikon Radish greens are incredibly delicious and are packed with those sweet sweet nutrients! The story of our very cute cabbages... (hem. )rowing magnificent bowling balls of cabbage is possibly one of the greatest feelings in farming& in life& in general. !ometimes however that doesn"t happen. The cabbage we transplanted this spring did not *si+e up., -ne reason was the lack of rainfall in the early summer& another reason was the heavy cabbage moth$catepillar pressure they were facing. %abbage moths are those pretty white butterflies you see flitting about. their catepillars eat brassica family plants / cabbage& kale& broccoli& cauliflower etc. They eat and eat and poop and eat and finally turn into cabbage moths themselves. There is a way to control cabbage moth populations. It"s organic approved. It"s fairly effective. It"s 0acillus thuringiensis. 0t. In most gardens and produce'growing operations it is a foliar spray. guiding veg cart down (less glorious) The spray contains bacteria spores which& when ingested by muddy slope certain 1epidoptera 2 butterflies3& kills them by messing with their gut. Do some research if you"re interested in some of the issues surrounding !t" We have decided not to spray it this season. 4aybe we"ll do it ne5t year& but for now we"ll settle for small cabbage.

Cris3y and Crun+$y Daik(n Cakes


6 % packed coarsely grated daikon radish 2the roots3 6$7 tsp salt 8 green onions& minced 9 egg beaten 8 Tbsp flour 9 tsp sesame oil 9$7 tsp white pepper bout 9$8 % panko bread crumbs :egetable oil for frying %oarsely grate the daikon radish and mi5 with 6$7 tsp of salt. 1et this sit in a bowl or colander for 6; minutes. fter the 6; minutes& s<uee+e the water out of the daikon with your hands. =ou"ll want the daikon really dry. 4i5 the daikon with minced green onion& beaten egg& flour& sesame oil& and white pepper. Take 9$6 % of the mi5ture and form cakes that are about 9$8 in thick. =ou should get > or ? cakes. !catter some panko on a plate and bread the top and bottom of each cake with a layer of panko. @eat 8 tsp of vegetable oil in a nonstick skillet over medium heat. Aanfry the cakes until the bottoms are golden brown. Blip the cakes over& add another 8 tsp of oil& and continue to panfry until the second side is golden brown. !erve with soy sauce if desired.

8 tsp sesame oil 9$8 onion& cut in thin half'moons pinch of sea salt 9'8 garlic cloves& chopped small 6 bunches daikon greens 29 bunch is the amount from 9 radish3& washed and chopped a few slices of fresh lemon 9. @eat a large sautC pan on medium heat. dd the oil. dd the onion and sea salt as soon as a little piece gently si++les in the oil. !autC& stirring fre<uently for about > minutes or until onion starts getting translucent. 8. dd the garlic and sautC for 8 minutes. 6. dd the daikon greens and stir until the greens get coated with the oil and onions. dd a Tbsp or two of water. %over and let cook until tender& 6'7 minutes. 7. Remove from heat. dd s<uee+es of lemon #uice when serving.
