Introduction
Goatmeat is the most widely consumed meat in the world
and is an important component of diets in the Middle East,
North Africa (MENA) and Asia. A large majority of goatmeat
produced is consumed in the country of origin.
Total world production of goat meat was around 5.2 million tonnes cwt in 2010,
53,000 tonnes, or 1% of which was traded on the export market at a total value of
US$239 million (FAO statistics).
Over the past 20 years the Australian goatmeat industry has experienced strong
growth, largely underpinned by the sale of goats derived from rangeland or
extensive production systems. Australia is the world leader in goatmeat exports,
with around 95% of Australian goatmeat sent offshore and accounting for around
50% of the global goatmeat trade.
Around 90% of Australias meat production is derived from rangeland goats, the
majority of which are mustered from semi-arid western regions of the eastern
states. The rangeland goat population was estimated to be between 4 6 million
head in 2011, but an accurate measure of the population is unlikely, due to the
vast spread of the population and ability to reproduce rapidly under favourable
climatic conditions.

Method
Rub the leg of goat with salt, coriander and pepper.
Brown well in heated pan with butter and oil.
Transfer to an ovenproof dish.
In the same pan that the meat was browned in, fry onions and garlic
until golden.
Add stock and tomatoes and mix well. Add to meat. Cover and roast at
160C for 2 hours.
Add the remaining ingredients and roast for a further 40 minutes or until
the vegetables are cooked and the meat is tender. Serve with couscous
and tabouleh.

According to the Australian Bureau of Statistics (2011-12 survey), the Australian managed goat flock was
516,142 head, with most of the flock (46%) in NSW, Queensland (39%), and Victoria (10%).
This was a decline of 30,471 head, or 6%, on the previous fiscal year, underpinned by a 17% decline in the NSW
flock, which was too large to offset increases of 20% and 37% in Queensland and Victoria, respectively.
In addition to the managed goat flock is the rangeland population, which in 2011 was estimated to be in the range
of 4-6 million head, however, the accuracy of the estimate is questionable, given the vast spread of the population.
Slaughter
For 2013, Australian goat slaughter was 2.07 million head

, up 12% on the 2012 total, and 29% on the five-year
average, continuing what has been decade of year-on-year increases.
Reflecting the presence of the rangeland population and hot and dry conditions throughout 2013, goat slaughter
in Queensland was up 14% year-on-year, at 747,945 head. Similarly, slaughter in Victoria and NSW was each up
19% year-on-year, at 883,480 head and 95,659 head, respectively. In contrast, slaughter in SA and WA eased, at
369,042 head, and 26,998 head, respectively.
Over-the-hook prices
Underpinned by the drought induced surge in
supplies, the national average over-the-hook (OTH)
export goat prices for 2013 was 202/kg cwt across
most weight categories (10.1-12kg cwt to 20.1kg+
cwt), which was a 6-7% year-on-year decline.
The 2013 prices averaged 14-15% below the five-
year average across most categories, despite strong
international demand and the easing A$ over the
course of the year.

In line with increasing slaughter, and the rising Boer
goat influence amongst the rangeland population,
production has been steadily increasing for a
number of years, with the 2013 volume up 6% year-
on-year, and 23% on the five-year average.
Production in Queensland was 11,961 tonnes cwt in
2013, up 9% year-on-year and 24% on the five-year
average, reaching the highest annual production on
record for a calendar year. Similarly, record
production was also reached in Victoria, at 12,348
tonnes cwt, up 12% year-on-year, while in NSW,
production reached 1,524 tonnes cwt, up 26% year-
on-year. In contrast, production in SA was down 4%
from 2012 levels, at 5,372 tonnes cwt, while in WA,
production halved, at 455 tonnes cwt.
According to the Goat Industry Council of Australia
(GICA), 90% of goat meat production is from
rangeland enterprises. Therefore, going forward the
rate of productivity increase will largely depend
upon seasonal conditions, along with the rate Boer
goat genetic infusion.
Average carcase weights
Average goat carcase weights during 2013 were
15.2 kg/head, down 5% on the 2012 average,
largely due to the drought conditions in the major
supply regions. Highlighting the extent of the dry,
average carcase weights are 4% below the five-year
average albeit, a period including the two record
rainfall years of 2011 and 2012, each with average
weights in excess of 16 kg/head.
Largely illustrated by the impact of the drought
conditions of 2013, going forward, average carcase
weights, and ultimately production, will largely
depend upon seasonal conditions.

Australian goat exports during 2013 reached 32,671 tonnes swt, up 12% year-on-
year, and the highest volume on record.
The 2013 export value was $161 million, up 21% year-on-year.

production exported.
Over the past decade, the volume of goat meat exported has more than doubled.
Assisting trade in 2013 was the easing of the A$, which in 2013 averaged 96US,
down 7% year-on-year, and which is forecast to trade between 84-90US in 2014.

accounted for nearly half of Australias total exports,
at 15,479 tonnes swt down 4% on the previous
year, but 12% above the five-year average.
In line with volumes declining slightly, the calendar
year export value to the US was back 4% on the
previous year, at $64.3 million.
Unlike beef and sheep exports, the overwhelming
majority of goatmeat is exported as whole carcase.
In 2013, 67% of goat meat exported to the US was
in whole carcase form, with a further 26% exported
as assorted cuts (three or more primals together).
Goatmeat exports to Canada in 2013 declined 7%
year-on-year, to 1,896 tonnes swt, with the volume
of carcase down 4%, at 1,802 tonnes swt. Despite
lower volumes shipped, total export values
increased 4% year-on-year, to $8.67 million.
The decline in shipments to the US comes following
five consecutive years of year-on-year increases,
with the rapid and large inclusion of China as an
Australian protein importer impeding the recent,
steady growth to the US and Canada.
Going forward, the US is likely to remain a large
Australian goatmeat consumer, given the expanding
Hispanic population large consumers of goat
meat.
In terms of trading position and pricing, the A$, as
previously mentioned, averaged 7% lower year-on-
year in 2013, at 96US, which, despite being volatile
at times, had an overall positive impact on
Australias trading position.
Going forward, the A$ is expected to trade at lower
levels than the 2013 average, and while there are
indications of improved economic sentiment in the
US, the persistence of demand from China will
largely dictate volumes shipped to North America
over the coming years.
Additionally, while it is difficult to ascertain
production levels going forward, and with the recent
drought induced slaughter having likely reduced the
breeding flock, production in 2014 is likely to be
lower, reducing the volume available for export.

year-on-year and 105% on the five-year average
during 2013, at 12,001 tonnes swt, comprising
almost entirely of whole carcase (99.6% of exports).
This growth was driven by a dramatic increase in
demand from China, with the 4,736 tonnes shipped
in 2013 up significantly from 373 tonnes swt in the
previous year. The increase in goat shipments to
China was in line with record Australian beef and
sheep meat exports to the region, which increased
371% and 112%, respectively, in 2013.
The rapid urbanisation, growing middle class and
corresponding growth in demand for protein in
China has been the catalyst behind Australias surge
in red meat exports to the region. This increase in
Chinese demand has attracted large volumes of
goat away from other major markets, and is the
main reason behind the decline in volumes shipped
to Malaysia during 2013.
The latest IMF forecast shows Chinese GDP growth
remaining around 7.5%, which signals a sustained
albeit slower expansion of the economy, which
has realised growth of over 10% per year for much
of the past decade. Chinas population (currently
1.36 billion people) is forecast to grow at an annual
rate of 0.46%, and combined with the continuing
growth of the economy, will see demand for
Australian red meat increase.
Shipments to Taiwan decreased in volume for 2013,
totalling 1,942 tonnes swt, down 3% on 2012.
Shipments to Malaysia were 34% lower than in
2012, with only 1,015 tonnes swt bound for
Malaysian ports.
Malaysia is also in a period of both sustained GDP
and population growth, with population recorded at
29.2m in January 2013, up from 27.8m in January
2010, while 2014 estimates suggest a GDP growth
rate of around 4%.
The unit value of Australian goat, beef and mutton
exports to Malaysia have tended to trend closely
over the past 16 years, with the only major
divergence coming between 2004 and 2007. At the
end of the September quarter in 2013, the unit value
of each of the three commodities were within 7/kg
of each other, with goat at $4.31/kg, beef $4.32/kg
and mutton $4.25/kg cwt. The goat meat unit value
was down 1.8% year-on-year in the September
quarter of 2013, while the 2013 average unit value
of $3.91/kg was down 7% on the five-year average.
Goat meat export values to China totalled 23.8
million, up eleven-fold year-on-year, while values to
Malaysia were $4.1 million, down 31% on 2012, and
Taiwan reached $16.1 million, up 13% year-on-year.

Trinidad and Tobago is the largest market in the region, where volumes for the year increased 3% from 2012
volumes, to 1,942 tonnes swt, with an annual value of $9.9 million, down 5%. Whole carcase exports to Trinidad
and Tobago were up 5% year-on-year, at 1,507 tonnes swt.
Jamaica is the next largest market in the region, where exports halved form the previous year, at 423 tonnes swt,
underpinned by the strong competition from China. The entire volume shipped in 2013 was whole carcase, where
in previous years there had been some further processing in Australia.
The very small population of Trinidad and Tobago (1.3 million people) and Jamaica (2.8 million people), along with
the relatively low GDP growth of 1.6% and 0.4% in 2013, respectively, could hinder their ability to compete with
the strength of Chinese buying power over the short to medium term limiting the export potential for Australian
goat meat to the region.

2 tbsp ground cumin
3 dried red chillies, sliced
2 large green chillies, sliced
2 tbsp mustard seeds
2 large onions, chopped
5 cloves garlic, crushed
Goat curry
Method
Cook cumin, red and green chillies, mustard seeds, onions and garlic in
oil over low heat. Cook until fragrant, approx 10 minutes.
Add goatmeat, curry powder, tumeric, salt, cinnamon and water.
Bring to simmer, cover and cook for approx 1 hour on low heat.
Add coconut cream, chopped coriander and season to taste.
Serve with steamed rice and pappadums.

Live exports summary
Table 3 Australian live goat exports (head)
Australian live goat exports for 2013 totalled at 75,107 head, up 21% year-on-year,
yet down 1% on the five-year average, while the value was up 3%, at $8.4 million.
Numbers to the largest market, Malaysia, were down 6% from year-ago levels, at
55,398 head, however, it should be noted that numbers to Singapore were up
785%, at 16,778 head (all of which are sent to Malaysia). The export value to
Malaysia was down 20%, at $6.1 million, while to Singapore the value was $1.5
million.
Malaysia is a large live market for Australian goats, due to its proximity, with the
majority of live goat exports being air freighted. Additionally, there is huge cultural
diversity in Malaysia all of which eat goat meat.
Furthermore, as demand from China increases for protein, including goat meat,
greater goat numbers from neighbouring countries are heading to China, as
opposed to Malaysia, creating an opportunity for Australian goat.
The majority of live goat exports in 2013 were from NSW, with numbers exported
from the state up 20% year-on-year, at 44,558 head accounting for 59% of total
live exports.
The greatest proportion of the remaining exports in 2013 was from SA, at 25,732
head, which was up 5% year-on-year. Numbers exported from Victoria (809 head),
the NT (1,080 head) and WA (2,231 head) were all higher than the previous year.
