Pizza Four in One

Ingredients

For pizza base


Refined flour (maida) 1 1/2 cups +

Oil 1 tablespoon + for greasing


Fresh yeast

Sugar

Method
Step 1

Place the yeast in a bowl. Add the sugar and two to three tablespoons of warm water and set aside for ten to fifteen
minutes.

Step 2

Mix flour, salt and yeast in another bowl. Add sufficient water and knead into soft dough. Add one tablespoon oil and
knead again. Cover with a wet muslin cloth and set aside for ten to fifteen minutes.

Step 3

Preheat oven to 220 C.

Step 4

To make the sauce, heat three tablespoons olive oil in a non-stick pan. Add garlic and saut.

Step 5

Add sliced onions and celery, mix well and saute till onions turn golden.

Step 6

Add tomatoes, mix and saute on high heat. Add salt, mix and cook for ten to fifteen minutes or till tomatoes turn soft
and pulpy

Step 7

Add tomato puree, mix well and cook on low heat for fifteen to twenty minutes.

Step 8

Divide pizza dough into four equal portions. Dust a little dry flour on the worktop and place a portion on it, flatten a
little and roll out into a large disc dusting with flour. This is pizza base.

Step 9

Dust a baking tray with flour and place the pizza base on it.

Step 10

Use the remaining dough to make some thin long cylinders. Place them on the pizza base to make a cross so that the
base gets divide into four parts. Prick the base with a fork, put the tray in the preheated oven and bake for seven to
eight minutes.

Step 11

Add the red chilli flakes and crushed peppercorns to the sauce. Switch off heat and add three to four torn basil leaves
and mix well.

Step 12

Spread some sauce on each part of the pizza base. For the first part, top with chopped onion and capsicum, sprinkle
salt, half teaspoon dried herbs and crushed peppercorns on top. Top the second part with mushrooms and red
chillies, sprinkle salt and crushed peppercorns on top. Top the third part with black olives, green olives and jalapeno,
sprinkle salt, remaining dried herbs and crushed peppercorns on top. Top the fourth part with remaining torn basil
leaves, sprinkle salt and crushed peppercorns on top.

Step 13

Drizzle remaining olive oil on top of the entire pizza, grate mozzarella cheese on each part, place the tray in the
preheated oven and bake till cheese melts.
