ngi. Trong sn phm thy sn l mt trong nhng ngun thc phm c bn
quan trng v ngy cng c a chung khp ni bi nhng u im vn c ca
chng nh: hm lng dinh dng cao, d tiu ha, hm lng cholesterol khng
ng k v cha cc hot cht sinh hc c tc dng phng chng mt s bnh cho

GMP 1.1: Cng on tip nhn nguyn liu


1. QUI TRNH:
Nguyn liu mc c thu mua t cc i l, c p trong cc thng cch
nhit v vn chuyn v nh my bng xe bo n, nhit bo qun 4 0C, thi
gian vn chuyn khng qu 12 gi.
Ti nh my nhn vin QC tin hnh kim tra ngun gc, tnh trng v sinh ca
phng tin bo qun v vn chuyn, nhit nguyn liu v nh gi cht
lng cm quan ca tng l nguyn liu. Ch nhn nhng l nguyn liu c cht
lng cm quan t yu cu.
Nu t yu cu th tip nhn: cn, nh du m s cho l nguyn liu.
2. GII THCH/ L DO
- p nguyn liu nhm m bo cho nguyn liu c ti, hn ch ti a

3. CC TH TC CN TUN TH
a. Yu cu chung
- Cng nhn tham gia sn xut phi trang b bo h lao ng v m bo v
sinh c nhn sch s. (theo SSOP 5)
- Phng tip nhn v sinh sch (theo SSOP 6).
- Dng c phi c v sinh sch s trc khi s dng (theo SSOP 3).
- S dng nc, nc sch (theo SSOP 1 v 2)
- Kim tra chnh xc ca cn trc khi cn nguyn liu.
b. Thao tc thc hin
- Chun b: R, cn, nhit k, bn nc sch < 10 0C (cho vo 2/3 bn, sau
-

cho nc vo cch ming bn khong 20cm).


Kim tra ngun gc: ch nhn nhng l nguyn liu c ngun gc t cc i

l, cng ty c kim tra v chp nhn.


Kim tra tnh trng v sinh ca phng tin vn chuyn v bo qun: phi

sch.
Kim tra cht lng cm quan ca tng l nguyn liu. Nu t yu cu th
tin hnh nhn: nguyn liu ln bn tip nhn kim tra ti, tp cht,
mc dp nt, kch c, v tin hnh phn loi s b theo quy cc ca

nh my.
Cn: nhn vin thng k phi ghi li kt qu cn chnh xc, r rang, nh du

m s l hng.
nh k v sinh bn v dng c tip nhn sau mi l nguyn liu (theo SSOP
3).

Sauk hi tip nhn xong phi tin hnh v sinh v kh trng dng c, bn tip

nhn, cn v phng tip nhn theo SSOP 3 v 6.


4. PHN CNG TRCH NHIM V BIU MU GIM ST
- Qun c phn xng chu trch nhim t chc thc hin v duy tr quy

phm ny.
T trng t tip nhn c trch nhim t chc v kim tra vic thc hin qui

phm ny.
Cng nhn t tip nhn c trch nhim thc hin ng quy phm.
KCS c phn cng chu trch nhim gim st vic thc hin qui phm:
kim tra ngun gc, giy cam kt khng s dng ha cht bo qun, cht
lng cm quan, tnh trng v sinh ca phng tin vn chuyn v bo qun,

nhit ca tng l nguyn liu.

Thay nc ra khi nc bn, duy tr nhit nc ra bng cch cho thm

Trong thi gian ch s ch, nguyn liu c bo qun vi vy trong cc

thng nha hoc thng cch nhit.


2. GII THCH/ L DO
- Ra loi b cc tp cht v gim bt lng vi sinh vt bm trn nguyn
liu.
3. CC TH TC CN TUN TH
- Cng nhn tham gia sn xut phi trang b BHL y v v sinh c nhn

sch s.
Dng c phi c v sinh sch s trc khi s dng.
S dng nc, nc sch
Nguyn liu sau khi cn c ra qua 2 bn nc sch, nhit <10 0C, khi
lng mi r ra 3 kg. Thao tc ra: Nhng ngp r nguyn liu trong bn
nc, dng tay khuy trn nguyn liu trong r (khong 10 vng) v gt tp
cht ra ngoi. Ra nguyn liu ln lt qua 2 nc vi nhit <10 0C. Thay
nc sau khi ra ti a 40 r. Khng c cc r nguyn liu chng ln
nhau.

4. PHN CNG TRCH NHIM V BIU MU GIM ST


- Qun c phn xng chu trch nhim t chc thc hin v duy tr quy
-

phm ny.
Cng nhn cng on ra 1 phi tun th ng qui phm ny.
Kt qu gim st c ghi vo Bo co gim st cng on RA 1.

1. QUI TRNH
Nguyn liu sau khi ra c chuyn qua khu s ch. Ti y cng nhn
tin hnh lm sch tng con bng tay v dao inox nh: tch ni tng, lt da,
b rng, mt. Lun p m bo nhit sn phm 60C.

- S ch loi b nhng phn khng n c (da, rng, mt, ni tng) theo
yu cu cng ngh.
3. CC TH TC CN TUN TH
a. Yu cu chung:
- Cng nhn tham gia sn xut phi trang b BHL y v v sinh sch s
(theo SSOP 5).
- Phng s ch v sinh sch (theo SSOP 3).
- S dng nc, nc sch (theo SSOP 1 v 2).
b. Thao tc:
- Chun b: r, thau, dao inox nh, vy, ba bn nc sch nhit 10 0C
(cho vo khong 2/3 bn, sau cho nc sch vo cch ming bn

khong 20cm).

30 pht. Thao tc nh sau:

Sn phm sau khi s ch cho vo r nh c p , phn ph liu b vo

thau. Khi r y cn v chuyn qua khu ra.


Ph liu thng xuyn c thu gom, cha trong cc dng c cha chuyn

dng v sau mi 1 gi chuyn ph liu ra ngoi qua ca ph liu.


4. PHN CNG TRCH NHIM V BIU MU GIM ST
