CHAPTER IV
PRESENTATION, ANALYSIS AND INTERPRETATION OF DATA
This chapter presents the analysis and interpretation of the data gathered to answer the
problem and sub problem.
This study aimed to determine the significant difference between the characteristics of the
Ginger Extract Flavored Muffins per treatment and compared to commercial muffin and to find
out which was the best treatment among the characteristics of treatment 1, treatment 2, and
treatment 3. The results of the evaluation of the respondents were recorded and presented in the
preceding tables. The following characteristics of the muffins were used to evaluate by the
respondents in terms of aroma, color, texture and taste.
In this study the three treatments of Ginger Extract Flavored Muffins were subjected in a
consumer sensory evaluation to find out the acceptability of it in terms of taste, texture, color and
aroma. There were 30 respondents which are divided to three groups: the elementary students
with the ages 11-12; the high school students with the ages 12-16; and adults in the ages 28-59.

We put the results into 3 tables and graphs to determine the most acceptable for the 10
respondents coming from elementary students in terms of taste, texture, color and aroma; another
table for the 10 respondents coming from high school students in terms of taste, texture, color
and aroma; and another for the 10 respondents coming from adults in terms of taste, texture,
color and aroma.
We substituted the scales into numbers to easily determine the value; Excellent = 5
points; Very Good = 4 points; Fair = 3 points; Poor =2 points and Im mad = 1 point.

Graph 4 above shows that most of the elementary students accepted treatment in terms of
texture is Treatment 1 and Treatment 2 with the same mean rating of 4.5 which is made up of
ginger extract and lemon extract: ginger extract and apple extract. Next to these treatments is
Treatment 3 with the mean rating of 4.3 close to Treatment 1 and Treatment 2.
