APPLE CRISP

Ingredients (Topping)

200 ml quick cooking oats


100 ml brown sugar
100 ml all purpose flour
5 ml cinnamon
f.g. nutmeg
65 ml margarine

Fruit Layer

4 apples
30 ml brown sugar
15 ml lemon juice
f.g. cinnamon

Method

1. Preheat oven to 375 degrees F.


2. Grease casserole dish with shortening.
3. Combine all topping ingredients except margarine. Cut in margarine with a pastry blender
until mixture resembles coarse crumbs
4. Wash, peel, slice or grate apples into greased dish.
5. Sprinkle with lemon juice, sugar and spice.
6. Spread topping over base.
7. Bake until topping is golden brown and the base is bubbling.
8. This may be served with whipped cream, ice cream, custard sauce or lemon sauce. It can
be served warm or cold.

Alternate Microwave Directions:

Cook on full power for 6-8 minutes. Let sit for 5 minutes.
PEACH COBBLER

Servings: 6-8

Ingredients (Filling)

1 can of peaches
175 ml sugar
100 ml water
30 ml butter

Method

1. Place peaches and water in saucepan and bring to a boil. Cook until peaches is softened. Remove from
heat and stir in sugar until dissolved. (IF the mixture is too runny, thicken with 5-10 ml cornstarch mixed
with a bit of water)
2. Place in glass baking dish about 20 cm x 20 cm x 5 cm. Dot with 30 ml of butter.

Ingredients (Batter Topping)

125 ml unsifted flour


125 ml sugar
3 ml baking powder
2 ml salt
30 ml softened margarine
1 egg, slightly beaten

Method

1. Preheat oven to 375 degrees.


2. In medium bowl, combine all batter ingredients. Beat with wooden spoon until smooth.
3. Drop in 9 portions over filling, spacing evenly. Batter will spread during baking.
4. Bake 35 minutes or until crust is golden.
5. Serve with cream or ice cream.
