Grilled Chicken Salad Recipe

For a delicious summer salad

Ingredients

2 grilled chicken breasts


2 corn on the cobs grilled
1 avocado
1 cup chopped Romaine lettuce
1 1/2 cup chopped cherry tomatoes
2 chopped red onions
4tsp cooking oil
4 tsp vinegar
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp dried oregano

Instructions

1. In a large salad bowl, combine lettuce, cherry tomatoes, onion and


avocado.
2. Cut corn kernels off the cobs and add to salad. Toss gently together.
3. In a small measuring cup, whisk together oil, vinegar, salt, pepper and
oregano. Pour over salad and toss gently to coat.

4. Slice or chop grilled chicken breasts.


5. Place salad on serving plates. Arrange half of sliced grilled chicken
breast on top of the salad, on each serving.
6. Serve immediately.
