Classic Caesar

Chicken Caesar Salad with homemade croutons

and dressing is a delicious and healthy dinner.

Ingredients

For the chicken:

2 pound boneless skinless chicken breasts (2 pieces)

2 teaspoon salt
2 teaspoon ground black pepper
2 tablespoon cooking oil

For the croutons:

4 slices white bread
2 teaspoon cooking oil

For the salad:

2 medium lettuce washed and chopped

1 cup tomatoes cut into halves

For the dressing:

1 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon fresh lime juice
1 teaspoon minced garlic
1/2 cup grated cheddar cheese
2 teaspoons cooking oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Instructions

1.Season the chicken breast with 1 teaspoon of salt and 1 teaspoon of

pepper.
2. In a pan, heat 1 tablespoon cooking oil over medium-heat.
3. Add the chicken and cook it on both sides until done (internal
temperature of 165 degrees). It will be crispy on the outside and soft
and juicy on the inside.

4.Take the chicken out of the pan and cut it into bite-size pieces.
5. Toast the bread in the toaster and cut it into cubes.

6. Mix mayonnaise, Dijon mustard, lime juice, parmesan, minced

garlic, ¼ tsp salt, and ¼ tsp black pepper.

7. In a medium bowl, add lettuce, followed by chicken pieces and

croutons.
8. Pour the dressing over the salad.
9. Add the tomatoes and toss to combine.
10. Serve and enjoy.
