of imported wines. That figure included French Champagne, Sauvignon Blanc from Marlborough and
Italian Chianti.

VARIETIES It is not surprising considering that Italian wines work so well with food. The two really go hand in hand,

and both are typically enhanced by the other.
Pinot Grigio is without a doubt Italys go-to white wine and for good reason. It highlights incredible acidity
and makes for easy food pairings, especially with seafood, poultry and an assortment of appetisers.
For a wine which pairs well with everything from spaghetti and meatballs to backyard barbecue, try
Chianti or Montepulciano. Both are solid red table wines that marry particularly well with food.
If you are looking to cook with rich flavoured meat, then take a turn with Piedmont's Barolo or an
Aglianico. Both are built to handle high fat, high protein with full flavours, powerful tannic structure and
incredible acidity. While not always cheap, they are perfect for those special occasions where the meat
dish is presented front and centre.
It is amazing to think how many of the Italian grape varieties are now grown and consumed here. Just
a few years ago most people would not know what Italian varieties were. Here is a small list of Italian
varieties that we now grow in Australia. How many do you recognise?

Beer, bacon and cheese bread
A favourite way to greedily enjoy this bacon and beer bread is to smear it with good quality butter
and a scattering of smoked Maldon sea salt, but it's also good simply topped with a runny fried egg.
Ingredients
3/4 cup (75 g) bacon chopped 3 cups (440 g) self-raising flour
2 tbs sugar 1/4 tsp freshly ground pepper Victoria Bitter 30pk 30*375ml

You will need: a 9 x 5-inch (22 x 13 cm) loaf pan; greaseproof paper; a wire cooking rack.
Method
1. Preheat the oven to 175C. Crumple a sheet of greaseproof paper and use it to line a loaf pan.
2. Cook the bacon in a skillet over a medium-high heat until cooked through. Remove from the skillet
and drain on clean paper towels.
3. Sift the flour into a large mixing bowl. Add the sugar and stir in the 3/4 cup of Gouda cheese.
Pour in the Hooten Dutch Lager and stir until the mixture forms a stiff batter.

Evolution of the concept
I launched Old Daves Soul around
five months ago after operating another
venue in the same location since 2011. Ive built the concept from the ground up featuring live
music and I needed a menu to fit that. We developed a menu focused on traditional Napoli-style pizza.
Its perfect gig food. Weve added a few options such as steaks, seafood and burgers but pizza remains
the focus. Whatever we do, its done from scratch and done well.
Whats with the name?
I believe in and am passionate about the concept so I put my name on the door. Our venue has a
personality that you can feel and that is really important to me. Our heart and soul goes into everything
we do, I am here every day with my team to deliver that. Whilst my name is on the door we operate as
a little family. The team and the artists are part of this and we want our customers to feel that welcoming
vibe. We are a little community.
Whats the secret to great pizza?
Pizzas are beautiful, simple, yet difficult to master. Our pizza is made using traditional Italian methods
and excite the senses. They look, feel, smell and taste amazing whilst the live music rounds out your

experience. The base is the foundation. We are perfectionists about our base. We tested hundreds of
dough ingredients and techniques before we arrived at our product. Its our secret recipe. Yes, its that BUY
good and no, I cannot share it. We only use the freshest toppings of the highest standard doing simple in
an amazing way to showcase the ingredients. The technique needs to be perfect. It took us a long time Wild Turkey 86.8 Proof 700ml
to arrive at our current product, but were always looking for improvements.
Musical offering
We offer live music every day of the week and feature emerging local artists who perform their original
work. Its rare for a venue to do that these days. The artists feel comfortable expressing themselves and
beautiful things happen. We build long term relationships with all the artists welcoming them to our family.

Certain nights we operate a buy one donate one initiative. For every main meal purchased we personally

deliver a fresh pizza to someone in need later that night. Its the same pizzas we sell. Customers get
the chance to write messages on the box as well. Weve partnered with Foodora who have provided
thermal bags so the pizzas are delivered fresh and piping hot. We have started distributing to Sydneys
rough sleepers and will extend this to other parts of the community. Last week we hosted a group of rough

sleepers to a night of music and pizza at Old Daves Soul and am planning more of these in the future.

ALPHA ESTATE ECOSYSTEM SERIES


Dedication to the Greek vineyards brought winemaker Angelos Iatridis to the Amyndeon ecosystem in
the North West of Greece, it was here he met viticulturist Makis Mavridis. Inspired by the uniqueness
of the region, Angelos and Makis decided to make wine together on that very spot.
The diverse Amyndeon ecosystem is central to the uniqueness and complexity of the wine.
The ecosystem is gifted with unique soil and geological features (light sandy soils, poor in organic
matter with excellent drainage capacity, located on top of a calcareous alluvial substrate created
by the earlier lacustrine deposits into which root systems with dense branching and dense capillary
roots are formatted). It enjoys exceptionally balanced climate conditions (which are determined
by the altitude of the plateau and the two adjacent lakes), especially during the crucial months of
maturation, fully responsive to the high demands for a balanced viticulture.
The ecosystem itself is a source of inspiration and development for its creators. The importance of
highlighting the ecosystem concept within an area - part of the protected NATURA 2000* network, has multiple weight and significance.
It showcases specific vine parcels with very specific and often unique identity features, with sustainable development conditions described under very strict
requirements, for the applied outmost gentle cultivation/vine-growing techniques. These are characterised by absolute respect to humans and the wine
produced in this environment.
There is a fairy tale which exists about the lakes. They say that once upon a time a well stood in the place where Vegoritida Lake currently stands. People
knew that every time they took water from the well they had to seal it well, so it would not overflow. But one night a girl scared by the fairies, left in a
hurry leaving it open. The plain was flooded and the next morning locals discovered the Vegoritida Lake. In reality, in ancient times, this was the location
of a huge lake called Eordea, with a size of 1000 square kilometres and a depth of 250 meters.
The scattered pieces of water left are today the Florina Lakes. The Alpha Estate Ecosystem series comes as a result of the endless sourcing of new
developments and highly selective vine-growing and sustainable winemaking practices. Each wine is single block, 100 per cent estate grown and
fermented by indigenous flora isolated from each specific block.
