Mackerel En Papillote

Ingredients:

- 1 Mackerel Fillet - 2 thin lemon slices


- 2 tsp Melted Butter - 2tsp chopped parsley
- 1tsp shallots (minced) - TT Salt & white pepper
- Pinch dried marjoram
Served with:

Buttered spinach - sauteed with butter and season with salt & pepper
Steamed Potatoes - Tourne potatoes. Blanched and then cook on butter.

Preparation:

- Cut a foil/parchment paper that is large enough to hold the fish and still have room for
crimping the edges.(if foil oil side up on the workbench)
- Place the fillet on the papillote and brush with melted butter. Sprinkle some salt, pepper,
parsley, marjoram and chopped shallot. Lay the lemon slices on top.
- Fold the papillote and place it on a saute pan, then set it on the range or oven to start
cooking. Bake it on 450F for 5-8 minutes.
-Serve immediately.
